The other day while I was in the shop, a customer came to buy three Red Pesto. I asked her how she used those and she said, “I do a fantastic recipe with chicken or with bacon rashers”.

She explained to me how to do it and even though  I have never seen a recipe with Pasta and Chicken together in Italy, I decided to give it a try. The result was delicious.

Here is the easy recipe of Chicken Penne with Red Pesto.

1 Large Onion

1 Clove of Garlic

1 Breast of Chicken

1 Red sweet pepper

1 Courgette

1/4 jar of Red Pesto

15 ml Extra Virgin Olive Oil

250 gr of Penne

 

 

Procedure

Add the olive oil to a large frying pan and heat it up.

Chop the onions into small cubes, crush the garlic clove and add them to  the oil. Soften them over medium heat or until the onion gets clear but not brown.

Then I added the pepper and the courgette. After stirring for a few minutes, add the chicken. But if you are going to try this recipe I suggest to stir fry the chicken first and then add the vegetables.

When this is ready set it aside.

Start to cook the penne in 2.5 lt of salty and boiling water. It will take 12/13 min.

When the pasta is almost ready (after 10′) put back the sauce on the heat and add the red pesto and a small ladle of water from the pasta. Stir it in for 1 or 2 min, drain the pasta and add it to the pan. Stir together until all the sauce sticks to the pasta.

The result was fantastic. We cleaned the pan with the bread. Enjoy.

The same recipe can be done using 3 rashers per person. In this case you have to strip them, stir fry them with the onion and courgette and then follow the rest of the recipe. If you try it, let me know how you did it.
