Chicken Morsels in Parmesan Crust is soft and juicy inside yet crispy on the outside. This simple dish is made of pieces of chicken, breaded egg, Parmesan cheese and bread crumbs. What makes it special is that it&#8217;s not served in an ordinary plate &#8211; it comes in\u00a0a crispy Parmesan wafer!<\/p>\n<p>Just follow the steps below and you will see that everybody will ask for second servings. \ud83d\ude42<\/p>\n<h2>Chicken Morsels\u00a0in Parmesan Crust<\/h2>\n<h3>Ingredients:<\/h3>\n<p><strong><em>Makes 20-25 pieces of chicken chunks<\/em><\/strong><\/p>\n<p>400 gr chicken breast<\/p>\n<p>100 gr Parmesan cheese<\/p>\n<p>75 gr bread crumbs<\/p>\n<p>2 eggs, beaten<\/p>\n<p>salt and pepper to taste<\/p>\n<p><a href=\"http:\/\/tastewithgusto.ie\/shop\/cannonata\/\">Cannonata<\/a>, <a href=\"http:\/\/tastewithgusto.ie\/shop\/asparagus-pate\/\">Pat\u00e9 di Asparagi<\/a>,\u00a0<a href=\"http:\/\/tastewithgusto.ie\/shop\/garlic-pate\/\">Pat\u00e9 di Aglio<\/a>,\u00a0<a href=\"http:\/\/tastewithgusto.ie\/shop\/sundried-tomato-pate-small\/\">Pat\u00e9 di Pomodori Secchi<\/a> to use as dip.<\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>For the Parmesan Crust:<\/strong><\/em><\/p>\n<p>use 20 gr of Parmesan for every crust<\/p>\n<h2>Procedure:<\/h2>\n<p>Start preparing the bread crumbs from some stale bread in a food processor. Set aside.<\/p>\n<p>Cut the chicken breast into 4 cm length pieces. Each should weigh about 20 grams. Set aside.<\/p>\n<p><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2015\/09\/Chicken-Morsels04.jpg\"><img decoding=\"async\" class=\"alignnone size-full wp-image-2252\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2015\/09\/Chicken-Morsels04.jpg\" alt=\"Chicken Morsels04\" width=\"400\" height=\"300\" srcset=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2015\/09\/Chicken-Morsels04.jpg 400w, https:\/\/cookwithgusto.com\/wp-content\/uploads\/2015\/09\/Chicken-Morsels04-300x225.jpg 300w\" sizes=\"(max-width: 400px) 100vw, 400px\" \/><\/a><\/p>\n<p>Arrange the following ingredients for the breading: beaten eggs with a pinch each of salt and pepper; bread crumbs and Parmesan cheese.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-2251\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2015\/09\/Chicken-Morsels03.jpg\" alt=\"Chicken Morsels03\" width=\"400\" height=\"300\" srcset=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2015\/09\/Chicken-Morsels03.jpg 400w, https:\/\/cookwithgusto.com\/wp-content\/uploads\/2015\/09\/Chicken-Morsels03-300x225.jpg 300w\" sizes=\"(max-width: 400px) 100vw, 400px\" \/><\/p>\n<p>Pass each chicken piece\u00a0into the egg mixture; then roll in Parmesan; pass into the egg mixture again; then finally, roll into the breadcrumbs. Set the pieces on an oven tray with an oiled grease-proof paper on it.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-2253\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2015\/09\/Chicken-Morsels05.jpg\" alt=\"Chicken Morsels05\" width=\"400\" height=\"300\" \/><\/p>\n<p>Bake them in the oven for 20 min at C200, turning them upside down after 10 minutes.<\/p>\n<p>NOTE:\u00a0If you like, you can fry the morsels instead of baking them in some oil until golden.<\/p>\n<p>While\u00a0\u00a0the morsels are cooking, you&#8217;re ready to make the Parmesan crust. Get a sheet of baking paper and cut out a circle with a diameter of about 20 cm. Now push with the help of a spoon the paper into a small bowl to give it a\u00a0cup shape.
