I do it often when friends come to visit because it&#8217;s full of flavour and everybody likes it. I hope that you will enjoy it too.<\/p>\n<h2>INGREDIENTS for 4 people<\/h2>\n<p>4\u00a0chicken breasts (it will make 8 rolls)<br \/>\n200 gr\u00a0bread crumbs<br \/>\n6 tbs\u00a0grated Parmigiano cheese,<br \/>\n150 gr\u00a0fresh baby spinach<br \/>\n1 clove of garlic<br \/>\n3 tbs <a href=\"http:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\" target=\"_blank\">Extra Virgin Olive Oil<\/a><br \/>\n200gr\u00a0ricotta cheese<br \/>\n4\u00a0egg whites<br \/>\n2 125gr fresh mozzarella cheese<br \/>\n1 small jar of <a href=\"http:\/\/tastewithgusto.ie\/shop\/cannonata-small\/\" target=\"_blank\">Cannonata<\/a> for topping<br \/>\nFresh basil<\/p>\n<h2>PROCEDURE<\/h2>\n<h4>Preparing the chicken breast:<\/h4>\n<p>Using a sharp knife, cut the chicken breast on the side into 2 pieces and again make a second butterfly cut &#8211; \u00a0that means that you don&#8217;t cut it completely trough so you can open it in two. Now combine the ricotta to the just sauteed spinach, Parmigiano cheese, and 2-3 tbs\u00a0of the egg whites. Oil a large baking dish. Take the first piece of chicken, place it on a working surface and spread a spoonful of ricotta and spinach mix. Roll the chicken up and dip it in the egg white. Roll it in the breadcrumbs.
