It&#8217;s healthy, gluten-free and can be an optional vegetarian dish perfect for summer menus.<\/p>\n<p>This is the second time that I have created a recipe with portobello mushroom (<a href=\"http:\/\/cookwithgusto.com\/stuffed-portobello-mushrooms\/\" target=\"_blank\" rel=\"noopener\">here&#8217;s the first<\/a>). I like this kind of mushroom not for the taste because I find them quite bland but for the fact that they are particularly suited to be stuffed. Their taste is\u00a0not too intense which allows the stuffing ingredients to be the\u00a0protagonists.<\/p>\n<p>In the following recipe, I used four different vegetable pat\u00e9:\u00a0<a href=\"http:\/\/tastewithgusto.ie\/shop\/cannonata-small\/\" target=\"_blank\" rel=\"noopener\">Cannonata<\/a>, <a href=\"http:\/\/tastewithgusto.ie\/shop\/sundried-tomato-pate-small\/\" target=\"_blank\" rel=\"noopener\">Sun-dried Tomato<\/a>, <a href=\"http:\/\/tastewithgusto.ie\/shop\/asparagus-pate\/\" target=\"_blank\" rel=\"noopener\">Asparagus<\/a>, and <a href=\"http:\/\/tastewithgusto.ie\/shop\/black-olive-tapenade\/\" target=\"_blank\" rel=\"noopener\">Black Olives<\/a>. In terms of taste, the best was the Sun-dried Tomato, followed by the Asparagus and Cannonata. The Black Olives Pat\u00e9, I think, didn&#8217;t work well, as it was too strong in flavour and did not match the mushroom&#8217;s taste.<\/p>\n<p>This was a fun experiment that you can try yourself with the help of your children or friends.<\/p>\n<p>It makes a very tasty and colourful antipasto or side dish and if you make a lot, can be a course by itself.<\/p>\n<h2>Portobello Mushroom Pizzas<\/h2>\n<h2><img decoding=\"async\" class=\"aligncenter size-full wp-image-3166\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2016\/05\/Portobello-Mushroom-Pizza-13.jpg\" alt=\"Portobello Mushroom Pizza 13\" width=\"400\" height=\"300\" srcset=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2016\/05\/Portobello-Mushroom-Pizza-13.jpg 400w, https:\/\/cookwithgusto.com\/wp-content\/uploads\/2016\/05\/Portobello-Mushroom-Pizza-13-300x225.jpg 300w\" sizes=\"(max-width: 400px) 100vw, 400px\" \/><\/h2>\n<h3>Ingredients<\/h3>\n<p>4 portobello mushrooms<\/p>\n<p>4 tbsp of pat\u00e9 of your own choice (I used\u00a0<a href=\"http:\/\/tastewithgusto.ie\/shop\/cannonata-small\/\" target=\"_blank\" rel=\"noopener\">Cannonata<\/a>, <a href=\"http:\/\/tastewithgusto.ie\/shop\/sundried-tomato-pate-small\/\" target=\"_blank\" rel=\"noopener\">Sun-dried Tomato<\/a>, <a href=\"http:\/\/tastewithgusto.ie\/shop\/asparagus-pate\/\" target=\"_blank\" rel=\"noopener\">Asparagus<\/a> and <a href=\"http:\/\/tastewithgusto.ie\/shop\/black-olive-tapenade\/\" target=\"_blank\" rel=\"noopener\">Black Olives<\/a>)<\/p>\n<p>150g Mozzarella<\/p>\n<p>Italian mixed herbs<\/p>\n<p><a href=\"http:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\" target=\"_blank\" rel=\"noopener\">Extra Virgin Olive oil<\/a><\/p>\n<p>For the toppings, I used: salami, asparagus, green pepper and tomato<\/p>\n<h3>Preparation<\/h3>\n<p>Wash the mushrooms and pat dry. Take the stems off. If you don&#8217;t like the dark water coming out from the mushroom when cooked, just scoop the gills from inside with a teaspoon.
