They combine perfectly with the smoky taste that the peppers acquire\u00a0when baked in the oven.<\/p>\n<p>This recipe proves that you can have a delicious and nutritious dish without renouncing a tasty flavour!<\/p>\n<p>To eat healthy and flavourful at the same time, try my:<\/p>\n<h1>Stuffed Peppers with Rice and Mozzarella!<\/h1>\n<h2>Ingredients for 6 people:<\/h2>\n<ul>\n<li>6 Peppers, both yellow and red, as you prefer<\/li>\n<li>300g Rice<\/li>\n<li>15 <a href=\"https:\/\/tastewithgusto.ie\/shop\/sun-dried-tomatoes\/\">Sundried Tomatoes<\/a><\/li>\n<li>100g Ham<\/li>\n<li>100g\u00a0<a href=\"http:\/\/tastewithgusto.ie\/shop\/pitted-rosate-olives\/\">Pitted Green, Rosate or\u00a0Black Olives<\/a>, as you prefer<\/li>\n<li>1 Vegetable Stock Cube<\/li>\n<li>Dried Mint<\/li>\n<li>Salt and Pepper, as needed<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2016\/10\/StuffedPeppersRiceMozzarella1-e1478089018957.jpg\" rel=\"attachment wp-att-3865\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-3865\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2016\/10\/StuffedPeppersRiceMozzarella1-e1478089018957-300x225.jpg\" alt=\"StuffedPeppersRiceMozzarella1\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>In a large pan bring to boil 3 litres of water with the stock cube. Put the rice in, and cook for the time indicated on the box. I&#8217;ve used Arborio Rice that takes 15 min to cook. Drain when cooked.<\/p>\n<p>Meanwhile, with a small knife, wash the peppers, cut their tops off and reserve then scoop out the seeds.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2016\/11\/StuffedPeppersRiceMozzarella2-e1478089242575.jpg\" rel=\"attachment wp-att-3870\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-3870\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2016\/11\/StuffedPeppersRiceMozzarella2-e1478089242575-300x198.jpg\" alt=\"StuffedPeppersRiceMozzarella2\" width=\"300\" height=\"198\" \/><\/a><\/p>\n<p>Prepare the filling: slice the\u00a0<a href=\"http:\/\/tastewithgusto.ie\/shop\/sun-dried-tomato\/\">sun-dried tomatoes<\/a>, cube the mozzarella and cut the ham into smaller pieces. Obviously, it is optional, if you prefer a vegetarian recipe. Stir everything together with the minced <a href=\"http:\/\/tastewithgusto.ie\/shop\/pitted-rosate-olives\/\">olives<\/a>, mint and season well.
