I am sure you&#8217;ll love it!<\/p>\n<p>&nbsp;<\/p>\n<p>Because everyone is Irish on St. Patrick\u00b4s Day, even Italians!<\/p>\n<h3><strong>Linguine with Courgette and Avocado Pesto<\/strong><\/h3>\n<p>Ingredients for 4 people:<\/p>\n<ul>\n<li><a href=\"https:\/\/tastewithgusto.ie\/shop\/linguine-500-gr\/\">400g of Linguine<\/a><\/li>\n<li>1 Courgette<\/li>\n<li>1 Avocado<\/li>\n<li><a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive Oil &#8220;Il Vero&#8221;<\/a><\/li>\n<li>2 cloves of Garlic<\/li>\n<li>A small bunch of Basil<\/li>\n<li>1\/2 Lemon<\/li>\n<li>1 tablespoon of grounded Almonds<\/li>\n<li>1 Chilli Pepper<\/li>\n<li>Salt and pepper, as needed<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado1-e1489409295918.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-4649 size-medium\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado1-300x230.jpg\" alt=\"ingredients\" width=\"300\" height=\"230\" \/><\/a><\/p>\n<p>Julienne the courgette.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado2-e1489409332702.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-4650 size-medium\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado2-300x169.jpg\" alt=\"zucchini\" width=\"300\" height=\"169\" \/><\/a><\/p>\n<p>Put few spoons of <a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive Oil &#8220;Il Vero&#8221;<\/a> in a pan and fry the garlic cloves and chilli pepper.<\/p>\n<p>Add the courgette strips with a pinch of salt and pepper. Gently\u00a0fry for 5 minutes.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado3-e1489409369889.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-4651 size-medium\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado3-300x169.jpg\" alt=\"zucchini\" width=\"300\" height=\"169\" \/><\/a><\/p>\n<p>Remove from the heat, when ready.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado6-e1489409820820.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-4658 size-medium\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado6-300x169.jpg\" alt=\"zucchini\" width=\"300\" height=\"169\" \/><\/a><\/p>\n<p>Wash the avocado, remove the skin and dice the pulp.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado4-e1489409398451.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-4652 size-medium\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado4-300x169.jpg\" alt=\"avocado\" width=\"300\" height=\"169\" \/><\/a><\/p>\n<p>In the meanwhile, fill 2\/3 of a\u00a0large pot with water. Add a pinch of salt and bring to boil over high heat. Add the <a href=\"https:\/\/tastewithgusto.ie\/shop\/linguine-500-gr\/\">linguine<\/a>\u00a0and stir, reducing to medium-high heat. Follow the pasta package directions\u00a0for cooking time.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado7-e1489409507335.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-4653 size-medium\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado7-300x169.jpg\" alt=\"pasta\" width=\"300\" height=\"169\" \/><\/a><\/p>\n<p>While the pasta is cooking, take a large bowl and mix the following ingredients: avocado cubes, basil, almonds, \u00a0garlic cloves (previously cooked without the skin). Then, add the juice of half lemon and a pinch of salt and pepper.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado5-e1489409620474.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-4654 size-medium\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado5-300x264.jpg\" alt=\"mix ingridients\" width=\"300\" height=\"264\" \/><\/a><\/p>\n<p>Blend the ingredients until the texture is\u00a0smooth and creamy. If the cream is too thick, you can dilute the sauce adding few spoons of boiling water from the pasta.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado8-e1489409662562.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-4655 size-medium\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/03\/LinguineCourgetteAvocado8-300x270.jpg\" alt=\"pesto \" width=\"300\" height=\"270\" \/><\/a><\/p>\n<p>Pour the <a href=\"https:\/\/tastewithgusto.ie\/shop\/linguine-500-gr\/\">linguine<\/a>\u00a0through a strainer and shake it to remove excess water.<\/p>\n<p>Put the pasta into the pan with the julienne courgette\u00a0and toss it with your handmade pesto.
