The Wood Oven"},"content":{"rendered":"<p>Who can resist a freshly baked loaf of bread? Golden, brown and crusty outside, soft and delicate inside. Especially when is still warm.. just it\u00b4s aroma should be enough to transport anyone to heaven!<\/p>\n<p>When it comes to baking bread, Italy is well known for its unique technics and artisan recipes. However, bread and other baked products are only possible today thanks to one of the most important inventions of all times.. the wood oven!<\/p>\n<p>In fact, the wood oven can be considered one of the first culinary revolutions in history and it started with a simple hole in the ground!<\/p>\n<figure id=\"attachment_4939\" aria-describedby=\"caption-attachment-4939\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/1168.jpg\"><img decoding=\"async\" class=\"wp-image-4939 size-medium\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/1168-300x218.jpg\" width=\"300\" height=\"218\" \/><\/a><figcaption id=\"caption-attachment-4939\" class=\"wp-caption-text\">Italian bakery<\/figcaption><\/figure>\n<p>At least from the Neolithic period to the nineteenth-century, loaf bread was baked in wood-fired ovens. Of course, there were always exceptions. Egyptians are known to have systematically baked large loaves of bread in clay pots that were broken to release the product when ready.<\/p>\n<figure id=\"attachment_4940\" aria-describedby=\"caption-attachment-4940\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/egittopane.png\"><img decoding=\"async\" class=\"wp-image-4940 size-full\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/egittopane.png\" width=\"295\" height=\"137\" \/><\/a><figcaption id=\"caption-attachment-4940\" class=\"wp-caption-text\">Egyptians baking bread before the introduction of the oven<\/figcaption><\/figure>\n<p>Today, wood fired ovens has been replaced with new technologies. Conversely, in Italy, the old way is still considered the best one!<\/p>\n<p>Starting from the begging, one million and a half of years ago in South Africa,\u00a0the fire was discovered by the Homo Erectus. Probably by chance, a lightning set on fire the branch of a tree. Simply a buried pit on the ground to place the food and then cover it with canopy leaves.<\/p>\n<figure id=\"attachment_4946\" aria-describedby=\"caption-attachment-4946\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/forno.png\"><img decoding=\"async\" class=\"wp-image-4946 size-full\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/forno.png\" width=\"295\" height=\"190\" \/><\/a><figcaption id=\"caption-attachment-4946\" class=\"wp-caption-text\">Rudimentary oven<\/figcaption><\/figure>\n<p>The first oven as we know it today was built by Egyptians and could be found along the Nile.\u00a0The structure slightly resembled our typical wood-burning oven. It was conic-shaped made of clay bricks. The wood was set on fire in the lower part of the structure and the food was placed in the higher part. A stone slab conducted the heat from the lower to the higher part of the oven.<\/p>\n<figure id=\"attachment_4947\" aria-describedby=\"caption-attachment-4947\" style=\"width: 161px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/forno1.jpg\"><img decoding=\"async\" class=\"wp-image-4947 size-full\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/forno1.jpg\" width=\"161\" height=\"280\" \/><\/a><figcaption id=\"caption-attachment-4947\" class=\"wp-caption-text\">Egyptian oven<\/figcaption><\/figure>\n<p>There was a hole on\u00a0the top of the structure that acted as a vent for the fumes. Unfortunately, due to the fact that this hole would also cause most of the hit to be wasted, the inventions did not succeed.<\/p>\n<p>In 1700 b.C., Greeks redefined the design of the oven. they built a \u00a0lateral opening, instead of an upper one. The structure was smaller and contained a calotte and a single chamber. This ingenious\u00a0invention became the first domestic oven.<\/p>\n<figure id=\"attachment_4948\" aria-describedby=\"caption-attachment-4948\" style=\"width: 296px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/fornogreco.png\"><img decoding=\"async\" class=\"wp-image-4948 size-full\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/fornogreco.png\" width=\"296\" height=\"221\" \/><\/a><figcaption id=\"caption-attachment-4948\" class=\"wp-caption-text\">Greek oven<\/figcaption><\/figure>\n<p>To the Romans, the Greek civilisation was a source of inspiration and they began to build different samples of this ovens.\u00a0The oven represented a major change in the roman culture. They started baking bread and creating delicious recipes that have been used for centuries up until today.<\/p>\n<figure id=\"attachment_4949\" aria-describedby=\"caption-attachment-4949\" style=\"width: 275px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/a.jpg\"><img decoding=\"async\" class=\"wp-image-4949 size-medium\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/a-275x300.jpg\" width=\"275\" height=\"300\" srcset=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/a-275x300.jpg 275w, https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/a.jpg 293w\" sizes=\"(max-width: 275px) 100vw, 275px\" \/><\/a><figcaption id=\"caption-attachment-4949\" class=\"wp-caption-text\">Greek Backery<\/figcaption><\/figure>\n<p>Under this circumstances, the roman emperor Numa Pompilio introduced a special\u00a0celebration throughout the year, calle &#8220;<em>furnacalia<\/em>&#8220;, whose root comes from <em>&#8220;furnus&#8221;<\/em>, the latin word for <em>&#8220;oven&#8221;<\/em>.<\/p>\n<p>The<em> Furnacalia<\/em> took place during the first mid of May, in honour of the Goddess Fornace, renowned to be the protector of the bread. During the celebrations, toasted hulled wheat grains, called <em>&#8220;mola salsa&#8221;<\/em> were given as sacrificial offering to the Goddess.<\/p>\n<p><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/furnicalia.png\"><img decoding=\"async\" class=\"size-full wp-image-4950 aligncenter\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/furnicalia.png\" alt=\"\" width=\"295\" height=\"207\" srcset=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/furnicalia.png 295w, https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/04\/furnicalia-78x55.png 78w\" sizes=\"(max-width: 295px) 100vw, 295px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>From the Roman Empire until now, there have not been big changes in the design of wood-burning ovens.
