Just to let you know, the &#8220;Pachino tomato&#8221; is the name of the most famous type of Italian cherry tomato. Its name come from the Sicilian city &#8220;Pachino&#8221;. Nowadays, even though we\u00a0can grow fresh tomatoes throughout the whole year, these preparation is still in high demand thanks to it&#8217;s rich flavour and health benefits!<\/span><\/p>\n<figure id=\"attachment_5895\" aria-describedby=\"caption-attachment-5895\" style=\"width: 276px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/08\/sundried9.png\"><img decoding=\"async\" class=\"wp-image-5895 size-full\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/08\/sundried9.png\" width=\"276\" height=\"183\" \/><\/a><figcaption id=\"caption-attachment-5895\" class=\"wp-caption-text\">Delicious with everything!<\/figcaption><\/figure>\n<h3 align=\"justify\">Health Benefits<\/h3>\n<p align=\"justify\">Sundried tomatoes preserve the same properties than fresh tomatoes. They are <strong>rich in vitamin C and lycopene<\/strong>. These important <strong>antioxidants\u00a0<\/strong>act <strong>against the ageing process o<\/strong>f the organism, especially the skin. A lack of <strong>lycopene<\/strong> is often related to a higher risk of osteoporosis. They are also a very good source of <strong>copper, potassium, manganese, dietary fibre, vitamin A, vitamin B6, folate, niacin, vitamin E and phosphorus.<\/strong><\/p>\n<p align=\"justify\">It is important to underline that sun-dried tomatoes also have some contraindications. They should not be eaten when a tomato intolerance or allergy is alleged, or in the case of heartburn.<\/p>\n<h3>How to make Sundried Tomatoes<\/h3>\n<p align=\"justify\">There are two different sun-dried tomatoes based preparations: the first is &#8220;Chiappi&#8221; a big tomato cut in halves. The second one is &#8220;Capuliato&#8221; minced sun-dried to make a wonderful pat\u00e8. It&#8217;s essential that the tomatoes are red and ripe. Then, they are cut in halves and placed in a big lattice covered with salt.<\/p>\n<p align=\"justify\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/08\/sundried3.png\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-5889\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/08\/sundried3.png\" alt=\"\" width=\"260\" height=\"194\" \/><\/a><\/p>\n<p align=\"justify\">Between June and July, the tomatoes are left under the sun for about 3 days.Then, they are rapidly\u00a0rehydrated for few minutes in boiling water (this step is important also for hygienic reasons). Afterwards, they are\u00a0placed on the lattice again.<\/p>\n<figure id=\"attachment_5888\" aria-describedby=\"caption-attachment-5888\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/08\/sundried2.png\"><img decoding=\"async\" class=\"wp-image-5888 size-full\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/08\/sundried2.png\" width=\"295\" height=\"221\" \/><\/a><figcaption id=\"caption-attachment-5888\" class=\"wp-caption-text\">Sundried Tomatoes lattices<\/figcaption><\/figure>\n<p>For this reason, the weather conditions, the temperature, light and air of Southern Italy make of this, the perfect place to sun-dry the tomatoes and to protect their organoleptic properties.<\/p>\n<p align=\"justify\">After three additional days, the sundried tomatoes are put in jars and conserved with sunflower oil and a herbs mixture. This combination of herbs is made with garlic, oregano, basil, fresh chilli capsicum and capers.<\/p>\n<figure id=\"attachment_5891\" aria-describedby=\"caption-attachment-5891\" style=\"width: 200px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/08\/sundried5.png\"><img decoding=\"async\" class=\"wp-image-5891 size-medium\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/08\/sundried5-200x300.png\" width=\"200\" height=\"300\" srcset=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/08\/sundried5-200x300.png 200w, https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/08\/sundried5.png 295w\" sizes=\"(max-width: 200px) 100vw, 200px\" \/><\/a><figcaption id=\"caption-attachment-5891\" class=\"wp-caption-text\">In the Jars<\/figcaption><\/figure>\n<p align=\"justify\">To make the &#8220;Capuliatu&#8221; (pat\u00e8) it&#8217;s necessary to dry the whole tomatoes and then to oil them. This process will make them soft. Then, they are seasoned in a bowl with the same herbs and spices than the previous one. Finally, they get finely minced, put in jars, and covered with sunflower oil.<\/p>\n<figure id=\"attachment_5890\" aria-describedby=\"caption-attachment-5890\" style=\"width: 276px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/08\/sundried4.png\"><img decoding=\"async\" class=\"wp-image-5890 size-full\" src=\"http:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/08\/sundried4.png\" width=\"276\" height=\"183\" \/><\/a><figcaption id=\"caption-attachment-5890\" class=\"wp-caption-text\">Capuliatu<\/figcaption><\/figure>\n<p align=\"justify\">In both cases, twist the tap and taste them after at least one month. The final product will have a fleshy and elastic texture, a dark red colour, and an aromatic scent. It is recommended the use of sunflower oil instead of extra virgin olive oil because the second one can change the unique taste of the sun-dried tomatoes.<\/p>\n<h3>Authentic Products!<\/h3>\n<p>You can find a whole range of product made with our succulent, rich and tasty\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/sun-dried-tomatoes\/\">Sun-Dried Tomatoes<\/a>. One of my favourite recipes is adding few spoons of the sun-dried tomato pat\u00e9 to my tomato sauce when cooking pasta. It gives a light and unique boost of taste to the sauce and it makes it irresistible. It is also perfect as a spread on\u00a0tarallini, bruschetta and crostini.
