Their sandy taste matches perfectly with grains such as couscous and nuts like pistachio.<\/p>\n<p>Today, I&#8217;m going to mix these ingredients to create a wonderful autumnal recipe with a summer\u00a0aftertaste.\u00a0 A perfect way to say goodbye to the previous seasons and welcome the winter! Moreover, since many traditions avoid\u00a0eating meat on Christmas Eve, this could be a great idea to give an original touch to your table and impress your guests!<\/p>\n<p>For my recipe, I will also use\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/black-olive-oven-baked\/\">Oven-Dried Black Olives,\u00a0<\/a>one of my favourite ingredients with couscous and\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/balsamic-vinegar-of-modena-igp-malpighi\/\">Balsamic Vinegar of Modena IGP &#8220;Malpighi&#8221;<\/a> a condiment that\u00a0It has a limpid, and bright colour with an intense but balanced perfume as well as a fruity flavour with wooden shades. A versatile product to use in the kitchen according to its own creativity!<\/p>\n<p>&nbsp;<\/p>\n<p>So, fasten your apron and let&#8217;s try my:<\/p>\n<h1>Cous Cous with Clams, Olives, Pistachio and Balsamic Vinegar &#8220;Malpighi&#8221;<\/h1>\n<h2>Ingredients<\/h2>\n<ul>\n<li>300g Couscous<\/li>\n<li>200g Clams (with shells)<\/li>\n<li>1 Tablespoon of Salted Capers<\/li>\n<li>1 White Onion<\/li>\n<li>170g <a href=\"https:\/\/tastewithgusto.ie\/shop\/black-olive-oven-baked\/\">Oven-Dried Black Olives<\/a><\/li>\n<li>5-6 Anchovy Fillets in Oil<\/li>\n<li>1 Tablespoon of Chestnut Honey<\/li>\n<li><a href=\"https:\/\/tastewithgusto.ie\/shop\/balsamic-vinegar-of-modena-igp-malpighi\/\">Balsamic Vinegar of Modena IGP &#8220;Malpighi&#8221;<\/a><\/li>\n<li><a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin\u00a0Olive Oil &#8220;Il Vero&#8221;<\/a><\/li>\n<li>100 ml Lemon Juice<\/li>\n<li>1 Green Chilli Pepper<\/li>\n<li>Oregano<\/li>\n<li>Salt, as needed<\/li>\n<li>A handful of Pistachios<\/li>\n<li>\n<p><figure id=\"attachment_6413\" aria-describedby=\"caption-attachment-6413\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/10\/ClamsCousCous1.png\"><img decoding=\"async\" class=\"wp-image-6413 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/10\/ClamsCousCous1.png\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6413\" class=\"wp-caption-text\">Ingredients<\/figcaption><\/figure><\/li>\n<\/ul>\n<div class=\"mk-text-block \">\n<p>Soak the capers to remove the salt, changing the water several times. Meanwhile, finely slice the onion and the green chilli pepper.<\/p>\n<figure id=\"attachment_6414\" aria-describedby=\"caption-attachment-6414\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/10\/ClamsCousCous2.jpg\"><img decoding=\"async\" class=\"wp-image-6414 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/10\/ClamsCousCous2.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6414\" class=\"wp-caption-text\">Slice the onion and green chilli pepper<\/figcaption><\/figure>\n<p>Lay the slices on the bottom of a baking tray, add the drained capers, whole olives, the anchovy fillets chopped into pieces, the sliced chilli peppers and sprinkle with oregano.<\/p>\n<figure id=\"attachment_6415\" aria-describedby=\"caption-attachment-6415\" style=\"width: 295px\" class=\"wp-caption class=\"wp-caption-text\">Put the sliced onion on a baking tray, olives, capers, anchovies, green chilli pepper and oregano.<\/figcaption><\/figure>\n<p>Drizzle the honey over the surface, sprinkle abundant <a href=\"https:\/\/tastewithgusto.ie\/shop\/balsamic-vinegar-of-modena-igp-malpighi\/\">Balsamic Vinegar of Modena PGI &#8220;Malpighi&#8221;<\/a> and\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin\u00a0Olive Oil &#8220;Il Vero&#8221;<\/a><\/p>\n<figure id=\"attachment_6416\" &#8220;Malpighi&#8221;<\/a> and\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin\u00a0Olive Oil &#8220;Il Vero&#8221;<\/a><\/figcaption><\/figure>\n<p>Bake at 180\u00b0 for 20-25 minutes.<\/p>\n<p>In the meanwhile rinse the clams to remove the sand.<\/p>\n<p>Prepare the couscous according to the instructions on the package, but replacing one third of the water with lemon juice.<\/p>\n<figure id=\"attachment_6417\" aria-describedby=\"caption-attachment-6417\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/10\/ClamsCousCous5.png\"><img decoding=\"async\" class=\"wp-image-6417 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/10\/ClamsCousCous5.png\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6417\" class=\"wp-caption-text\">Prepare the cous cous<\/figcaption><\/figure>\n<p>Roast the pistachios and coarsely crush them in a mortar.<\/p>\n<p>Take the baking tray out of the oven when the capers and olives are crispy and covered with a caramelized layer.<\/p>\n<figure id=\"attachment_6419\" aria-describedby=\"caption-attachment-6419\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a class=\"wp-caption-text\">Make the onion and olives crispy and caramelized<\/figcaption><\/figure>\n<p>Quickly add the clams and mix well so as to blanch them with the residual heat of the other
