The traditional version is original from Southern\u00a0Italy and It&#8217;s a classic for any occasion, either summer or Christmas.<\/p>\n<p>You can follow the recipe to the\u00a0<a href=\"https:\/\/cookwithgusto.com\/parmigiana-di-melanzane\/\">Traditional Parmigiana di Melanzane<\/a>\u00a0on our blog. However, this recipe can be quite heavy\u00a0because the aubergines are fried and seasoned with lots cheese.<\/p>\n<p>For this reason, today I have prepared\u00a0for you a lighter version of this stunning dish: The main difference is that for this recipe we are going to bake the aubergines in the oven and add some authentic\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/basil-pesto\/\">Basil Pesto<\/a> instead of tomato sauce.<\/p>\n<p>A quick and simple recipe that is delicious even the day after cooking!<\/p>\n<p>Are you ready to try this delicacy?<\/p>\n<p>Bend the rules with me and let&#8217;s cook my:<\/p>\n<h1>White &#8220;Aubergine Parmigiana&#8221;<\/h1>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>2 Aubergines (700g \/ 800g)<\/li>\n<li>Bread Crumbs<\/li>\n<li>400g Mozzarella<\/li>\n<li>150g<a href=\"https:\/\/tastewithgusto.ie\/shop\/basil-pesto\/\">\u00a0Basil Pesto<\/a><\/li>\n<li>Salt, as needed<\/li>\n<li><a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive Oil\u00a0&#8220;Il Vero&#8221;<\/a><\/li>\n<li>\n<p><figure id=\"attachment_6234\" aria-describedby=\"caption-attachment-6234\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/09\/WhiteParmigiana1.jpg\"><img decoding=\"async\" class=\"wp-image-6234 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/09\/WhiteParmigiana1.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6234\" class=\"wp-caption-text\">Ingredients<\/figcaption><\/figure><\/li>\n<\/ul>\n<p>Wash the aubergines and cut them into slices of 1.5 cm each.\u00a0Remember that eggplant loses moisture and shrinks when cooked. To compensate, cut the raw eggplant into pieces about twice as large as you want the cooked pieces to be.<\/p>\n<figure id=\"attachment_6235\" aria-describedby=\"caption-attachment-6235\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/09\/WhiteParmigiana2.jpg\"><img decoding=\"async\" class=\"wp-image-6235 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2017\/09\/WhiteParmigiana2.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6235\" class=\"wp-caption-text\">Slice the aubergines<\/figcaption><\/figure>\n<p>Place them on a baking tin covered with baking paper.\u00a0Make a few slits in the flesh of the\u00a0aubergine\u00a0lengthways. Repeat the process until the casserole is full.
