The leaves are a little bitter with a crisp crunch. <strong>Speck<\/strong> is a pork-product very similar to prosciutto but the meat is smoked as a final step in the curing process.<\/p>\n<p>The combination of &#8220;radicchio and speck&#8221; is a classic\u00a0Italian winter recipe. It has a delicious bitter aftertaste and the crunchy speck strips give an intense boost of taste to the sauce. For my recipe, I used <a href=\"https:\/\/tastewithgusto.ie\/shop\/fettuccia\/\">Fettucina<\/a>\u00a0pasta because\u00a0is a perfect cradle for the sauce and is one of my favourite shapes for a Sunday Meal!<\/p>\n<p>Discover all the secrets of this super easy and quick recipe and surprise your guests!<\/p>\n<p>So what are you waiting for? Let&#8217;s try my:<\/p>\n<h1>Fettuccine Pasta with Speck and Radicchio Sauce<\/h1>\n<h2>Ingredients for 4 people:<\/h2>\n<ul>\n<li><a href=\"https:\/\/tastewithgusto.ie\/shop\/fettuccia\/\">250g Fettuccia Pasta <\/a><\/li>\n<li>400g Radicchio<\/li>\n<li>180g Speck (strips)<\/li>\n<li>100g Single Cream<\/li>\n<li>50g Tomato Sauce<\/li>\n<li>1 Shallot<\/li>\n<li><a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive Oil &#8220;Il Vero&#8221;<\/a><\/li>\n<\/ul>\n<p>Salt and Pepper, as needed<\/p>\n<figure id=\"attachment_6813\" aria-describedby=\"caption-attachment-6813\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/Radicchiotagliatelle1.jpg\"><img decoding=\"async\" class=\"wp-image-6813 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/Radicchiotagliatelle1.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6813\" class=\"wp-caption-text\">Ingredients<\/figcaption><\/figure>\n<p>Clean and finely slice the radicchio salad and the shallot.<\/p>\n<figure>Saut\u00e8e the chopped shallot in a pan with a bit of <a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive Oil &#8220;Il Vero&#8221;<\/a> for 4-5 minutes.<\/figure>\n<figure>Then, add the speck strips, and fry them all together for further 4 minutes.<\/figure>\n<figure>\n<p><figure id=\"attachment_6814\" aria-describedby=\"caption-attachment-6814\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/Radicchiotagliatelle2.jpg\"><img decoding=\"async\" class=\"wp-image-6814 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/Radicchiotagliatelle2.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6814\" class=\"wp-caption-text\">Saut\u00e8e the shallot and fry the strips of speck.<\/figcaption><\/figure><\/figure>\n<figure>Add the single cream and the tomato sauce, and stir. Then, adjust salt and pepper, according to your taste, and cook for further 7 minutes.<\/figure>\n<figure><\/figure>\n<figure id=\"attachment_6815\" aria-describedby=\"caption-attachment-6815\" style=\"width: 296px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/Radicchiotagliatelle3.jpg\"><img decoding=\"async\" class=\"wp-image-6815 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/Radicchiotagliatelle3.jpg\" alt=\"\" width=\"296\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6815\" class=\"wp-caption-text\">Add the cream and the tomato sauce<\/figcaption><\/figure>\n<p>In the meanwhile, cook the <a href=\"https:\/\/tastewithgusto.ie\/shop\/fettuccia\/\">Fettuccia<\/a> pasta in salted boiling water. Drain the pasta 2 minutes before the time, and ultimate the cooking in the pan with the sauce.
