A rich and nourishing dish that can be eaten as a complete meal.<\/p>\n<p>This delicious\u00a0savoury baked cake is made of a crunchy mashed potatoes shell and filled with\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/black-olive-tapenade\/\">Black Olives Tapenade,<\/a>\u00a0spinach, ham and cheese! If you prefer a lighter taste you can also use\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/green-olive-tapenade\/\">Green Olive Tapenade<\/a>.<\/p>\n<p><a href=\"https:\/\/tastewithgusto.ie\/shop\/black-olive-tapenade\/\">Black Olives Tapenade<\/a>\u00a0is made with the finest black olives from Italy and it is a versatile ingredient that can be used to enrich the taste of a wide variety of dishes including pasta,\u00a0meat or fish dishes (especially barbecued foods). It is also the perfect spread for\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/traditional-tarallini-bread\/\">tarallini,<\/a> crostini or bruschetta. I also love adding few spoons as a dressing\u00a0for salads, stews and soups. Try my:<\/p>\n<h1>Savoury Stuffed Potato Cake<\/h1>\n<h2>Ingredients<\/h2>\n<ul>\n<li>250g Cheese (I used Provola, a typical Italian cheese with a smoky flavour. You can use any other cheese including\u00a0 cheddar)<\/li>\n<li>1Kg boiled Potatoes<\/li>\n<li>500g Spinach<\/li>\n<li>150g Ham<\/li>\n<li>1 Jar of <a href=\"https:\/\/tastewithgusto.ie\/shop\/black-olive-tapenade\/\">Black Olives Tapenade<\/a> or <a href=\"https:\/\/tastewithgusto.ie\/shop\/green-olive-tapenade\/\">Green Olives Tapenade<\/a><\/li>\n<li>2 Yolks<\/li>\n<li>70g Grated Parmesan<\/li>\n<li>10g Butter<\/li>\n<li>Breadcrumbs or Sweetcorn Flour, as needed<\/li>\n<li><a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive Oil &#8220;Il Vero&#8221;<\/a><\/li>\n<li>1 Clove of Garlic<\/li>\n<li>Nutmeg, Salt and Pepper, as needed<\/li>\n<li><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/PotatoCake1.jpg\"><img decoding=\"async\" class=\"aligncenter wp-image-6931 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/PotatoCake1-1-1.jpg\" alt=\"\" width=\"296\" height=\"168\" \/><\/a><\/li>\n<\/ul>\n<p>Boiled potatoes and mash them. Then, add the yolks, the grated parmesan, a pinch of grated nutmeg and adjust salt and pepper. Then, mix all together.<\/p>\n<figure id=\"attachment_6827\" aria-describedby=\"caption-attachment-6827\" style=\"width: 296px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/PotatoCake3.png\"><img decoding=\"async\" class=\"wp-image-6827 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/PotatoCake3.png\" alt=\"\" width=\"296\" height=\"167\" \/><\/a><figcaption id=\"caption-attachment-6827\" class=\"wp-caption-text\">Mix all the ingredients<\/figcaption><\/figure>\n<p>Afterwards, fry the spinach in a pan with a bit of <a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive Oil &#8220;Il Vero&#8221;<\/a> and a clove of garlic. It will take around 10 minutes. Then, remove from the pan drain\u00a0off any\u00a0excess water.<\/p>\n<figure id=\"attachment_6828\" aria-describedby=\"caption-attachment-6828\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/PotatoCake2.jpg\"><img decoding=\"async\" class=\"wp-image-6828 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/PotatoCake2.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6828\" class=\"wp-caption-text\">Fry the spinach<\/figcaption><\/figure>\n<p>Line a cake tin (23cm of diameter) and grease it with butter. Then, pour the breadcrumbs\u00a0(or sweetcorn flour) on the bottom the baking sheet.<\/p>\n<p>With a pastry bag, create a layer of potato mixture and cover also the wall of the cake tin.<\/p>\n<figure id=\"attachment_6829\" aria-describedby=\"caption-attachment-6829\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/PotatoCake4.png\"><img decoding=\"async\" class=\"wp-image-6829 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/PotatoCake4.png\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6829\" class=\"wp-caption-text\">Create the base with the potato mixture<\/figcaption><\/figure>\n<figure>On the bottom of the baking tin, spread a few spoons of<a href=\"https:\/\/tastewithgusto.ie\/shop\/black-olive-tapenade\/\"> Black Olives Tapenade<\/a> (or the <a href=\"https:\/\/tastewithgusto.ie\/shop\/green-olive-tapenade\/\">Green Olives Tapenade\u00a0<\/a>if you prefer a lighter taste). For the last 10 minutes switch to the grill function.<\/p>\n<figure>When brown, turn off the oven and let the cake rest for 10 minutes. Then serve!
