It&#8217;s an ancient ingredient of the Italian cuisine and there are many different recipes to make the dough and the sauce. In Rome, there is a recipe which is slightly different from all the other ones so I really wanted to share it with you today!<\/p>\n<p>There are 2 famous Roman sayings perfect for the occasion:<\/p>\n<p>&#8220;<span style=\"font-family: 'Helvetica Neue', Helvetica, Arial, sans-serif; font-size: 14px; font-style: normal; font-variant-ligatures: normal; font-variant-caps: normal; font-weight: 400;\">Gioved\u00ec gnocchi, venerd\u00ec pesce e sabato trippa!&#8221;<\/span>\u00a0which means &#8220;<em>Thursday gnocchi, Friday fish, and Saturday gut!<\/em>&#8221; This saying refers to the fact that gnocchi is such a nourishing meal. Ones upon a time, they were eaten on Thursday\u00a0so people could even fast on Friday.<\/p>\n<p>Now, let&#8217;s make &#8220;Gnocchi a la Romana&#8221; the dough is made with semolina, instead of potatoes, and it becomes crunchy thanks to the grated pecorino and butter.<\/p>\n<p>You can also use your favourite <a href=\"https:\/\/tastewithgusto.ie\/shop\/2-pasta-sauces\/\">pasta sauce<\/a> as a condiment for this recipe!<\/p>\n<p>Do you want to find out how to make the Traditional Gnocchi? Follow the link to learn Franco&#8217;s recipe used for generations:\u00a0\u00a0<span class=\"ac-designer-copy\"><a class=\"ac-designer-copy\" href=\"https:\/\/cookwithgusto.com\/gnocchi\/\" data-ac-default-color=\"1\">&#8220;Stasera Gnocchi &#8211; Gnocchi Tonight&#8221;<\/a><\/span><\/p>\n<p>So, get ready and prepare my:<\/p>\n<h1>Gnocchi alla\u00a0Romana<\/h1>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>250g Semolina<\/li>\n<li>1l Milk<\/li>\n<li>100g Butter<\/li>\n<li>2 Yolks<\/li>\n<li>100g Grated Parmesan<\/li>\n<li>40g Pecorino cheese (optional)<\/li>\n<li>Nutmeg and salt, as needed<\/li>\n<li>\n<p><figure id=\"attachment_6836\" aria-describedby=\"caption-attachment-6836\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/GnocchiRomana1.jpg\"><img decoding=\"async\" class=\"wp-image-6836 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/01\/GnocchiRomana1.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6836\" class=\"wp-caption-text\">Ingredients<\/figcaption><\/figure><\/li>\n<\/ul>\n<p>In a pan, pour the milk and add one Tbsp of melted butter, 7g of salt and a pinch of grated nutmeg. Bring the mixture to the boil and then pour slowly the semolina, quickly stirring the liquid, to avoid clots.<\/p>\n<p>Cook the mixture for a few minutes on a low heat, until thick. Remove the pan from the heat, and add the yolks, stirring with a wooden ladle. Finally, add the grated Parmesan, and stir again.<\/p>\n<p>Pour the hot mixture on a sheet of baking paper, wrap it and shape it as a cylinder.
