It is a thick soup, made of bread, tomatoes, <a href=\"https:\/\/tastewithgusto.ie\/shop\/organic-extra-virgin-olive-oil-casa-caroli-0-75lt\/\"><strong>Extra Virgin Olive Oil,<\/strong> <\/a>garlic and basil. It can be eaten either <strong>warm or cold<\/strong> and a nutritious recipe for those who follow a <strong>vegetarian diet.\u00a0<\/strong><\/p>\n<p>This dish was made\u00a0to help use up leftovers and stale bread but nowadays it has become\u00a0a gourmet meal due to the fantastic taste of these natural ingredients.<\/p>\n<p>This recipe combines perfectly with\u00a0<a class=\"ac-designer-copy\" href=\"https:\/\/tastewithgusto.ie\/shop\/organic-extra-virgin-olive-oil-casa-caroli-0-75lt\/\" data-ac-default-color=\"1\"><strong class=\"ac-designer-copy\">Organic Extra Virgin Olive Oil \u201cCasa Caroli\u201d<\/strong><\/a>\u00a0 this robust, green oil is produced in the ancient Apulian tradition. Caroli\u2019s farm uses the natural resources of the land\u00a0<span class=\"ac-designer-copy\">avoiding fertilizers\u00a0<\/span>or chemical pesticides and producing cold-pressed organic extra virgin olive oil\u00a0<span class=\"ac-designer-copy\">harvested by hand<\/span>\u00a0or with shakers and nets. Have a quick dip in the Tuscan atmosphere and try my:<\/p>\n<h1>Pappa al Pomodoro<\/h1>\n<ul>\n<li>\n<h2>Ingredients<\/h2>\n<\/li>\n<li>800g Tomatoes<\/li>\n<li>300g Bread (stale, also)<\/li>\n<li>20 Basil leaves<\/li>\n<li>3 Clove of Garlic<\/li>\n<li>1 Ts of finely sliced White Onion<\/li>\n<li>1-liter Vegetable Stock<\/li>\n<li><a href=\"https:\/\/tastewithgusto.ie\/shop\/organic-extra-virgin-olive-oil-casa-caroli-0-75lt\/\"><strong>Organic Extra Virgin Olive Oil \u201cCasa Caroli\u201d<\/strong><\/a><\/li>\n<li>Salt and Pepper, as needed<\/li>\n<li>1 Pinch of Sugar<\/li>\n<p><figure id=\"attachment_6979\" aria-describedby=\"caption-attachment-6979\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa1.jpg\"><img decoding=\"async\" class=\"wp-image-6979 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa1.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6979\" class=\"wp-caption-text\">Ingredients<\/figcaption><\/figure><\/li>\n<\/ul>\n<h3>To prepare your\u00a0&#8220;Pappa al Pomodoro&#8221;<\/h3>\n<ul>\n<li class=\"instruction\">Place a pot of water on the stove and let it come to a rolling boil. Rinse your tomatoes clean and remove any stems that are still attached. Using a sharp knife, slice a shallow X into the bottom of the tomato (opposite the stem side).<\/li>\n<p><figure id=\"attachment_6980\" aria-describedby=\"caption-attachment-6980\" style=\"width: 296px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa2.jpg\"><img decoding=\"async\" class=\"wp-image-6980 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa2.jpg\" alt=\"\" width=\"296\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6980\" class=\"wp-caption-text\">Slice a shallow X into the bottom of the tomato<\/figcaption><\/figure><\/li>\n<li class=\"instruction\">Gently place the tomatoes into the boiling water, cooking them for no longer than 25 seconds.\u00a0Remove the tomatoes immediately from the boiling water using a slotted spoon.<\/li>\n<li class=\"instruction\">Cool the tomatoes off with cold water. Then, begin peeling the skin at the X, pulling the skin back gently.<\/li>\n<p><figure id=\"attachment_6981\" aria-describedby=\"caption-attachment-6981\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa3.jpg\"><img decoding=\"async\" class=\"wp-image-6981 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa3.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6981\" class=\"wp-caption-text\">Peel the skin off<\/figcaption><\/figure><\/li>\n<li>In a pot, warm up 3 Tbsp of <strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/organic-extra-virgin-olive-oil-casa-caroli-0-75lt\/\">Extra Virgin Olive Oil &#8220;Caroli&#8221;<\/a><\/strong> and gently fry the third clove of garlic. Remove it, and add the sliced onion.<\/li>\n<li>Pour a bit of the hot vegetable stock in the pot and let the onion soften.<\/li>\n<li>In the meanwhile, w<span style=\"font-family: 'Helvetica Neue', Helvetica, Arial, sans-serif; font-size: 14px; font-style: normal; font-variant-ligatures: normal; font-variant-caps: normal; font-weight: 400;\">arm up the sliced bread in the oven at 200\u00b0C per a few minutes. Then, leave them cool down and then rub with two of the peeled cloves of garlic.<\/span><\/li>\n<p><figure id=\"attachment_6982\" aria-describedby=\"caption-attachment-6982\" style=\"width: 296px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa4.png\"><img decoding=\"async\" class=\"wp-image-6982 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa4.png\" alt=\"\" width=\"296\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6982\" class=\"wp-caption-text\">Rub the bread slices with the garlic cloves<\/figcaption><\/figure><\/li>\n<li>Add the tomatoes in the pot on a high heat, let the sauce cook and slightly reduce de hit for the last 5 minutes. Adjust with salt and pepper.<\/li>\n<p><figure id=\"attachment_6983\" aria-describedby=\"caption-attachment-6983\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa5.png\"><img decoding=\"async\" class=\"wp-image-6983 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa5.png\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6983\" class=\"wp-caption-text\">Add the tomatoes to the pot<\/figcaption><\/figure><\/li>\n<\/ul>\n<p>Add the bread to the pot with the tomato sauce and the chopped basil leaves. Save some 8-10 of the basil leaves for later.<\/p>\n<figure id=\"attachment_6984\" aria-describedby=\"caption-attachment-6984\" style=\"width: 296px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa7.png\"><img decoding=\"async\" class=\"wp-image-6984 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa7.png\" alt=\"\" width=\"296\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6984\" class=\"wp-caption-text\">Add the garlic bread and the chopped basil leaves<\/figcaption><\/figure>\n<p>Cook on a low heat for around 30-40 minutes, pouring progressively the remaining vegetable stock. Stir frequently, so as to obtain a soft texture.<\/p>\n<figure id=\"attachment_6985\" aria-describedby=\"caption-attachment-6985\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa8.png\"><img decoding=\"async\" class=\"wp-image-6985 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/Pappa8.png\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-6985\" class=\"wp-caption-text\">While cooking, the bread and tomatoes will become a soft homogeneous &#8220;pappa&#8221; (a creamy soup)<\/figcaption><\/figure>\n<p>Remove from the heat.
