A little trick is to\u00a0turn off\u00a0the\u00a0heat before you add the yolk sauce. This way, you&#8217;ll obtain a super velvety texture&#8230;<\/p>\n<p>The creamy carbonara sauce suits perfectly with\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/paccheri\/\">Paccheri Pasta<\/a>\u00a0because the shape and big size of this pasta are perfect to embrace the sauce and the pieces of artichoke. Try my:<\/p>\n<h1>Paccheri pasta in Artichoke-Carbonara\u00a0 Sauce<\/h1>\n<h2>Ingredients for 4 people:<\/h2>\n<ul>\n<li>320g\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/paccheri\/\">Paccheri Pasta<\/a><\/li>\n<li>700g Artichokes (around 4)<\/li>\n<li>5 Yolks<\/li>\n<li>150g Smoked Bacon (cubes)<\/li>\n<li>30g grated Parmesan<\/li>\n<li>30g grated Pecorino cheese<\/li>\n<li>1 Shallot (or Leek)<\/li>\n<li>50ml White Wine<\/li>\n<li>4 Tbsp <a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive Oil &#8220;Il Vero&#8221;<\/a><\/li>\n<li>Salt and Pepper, as needed<\/li>\n<li>\n<p><figure id=\"attachment_7063\" aria-describedby=\"caption-attachment-7063\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/PaccheriArtichoke1.jpg\"><img decoding=\"async\" class=\"wp-image-7063 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/PaccheriArtichoke1.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-7063\" class=\"wp-caption-text\">Ingredients<\/figcaption><\/figure><\/li>\n<li>\n<h3>Tuck in!<\/h3>\n<\/li>\n<\/ul>\n<p>First of all clean and trim the artichokes.\u00a0Pull off the outermost leaves (again, technically, they&#8217;re bracts) until you get down to the lighter, yellow leaves.\u00a0Cut off the top 1\/4 inch of the artichoke.\u00a0<span style=\"font-family: 'Helvetica Neue', Helvetica, Arial, sans-serif; font-size: 14px; font-style: normal; font-variant-ligatures: normal; font-variant-caps: normal; font-weight: 400;\">Trim the stem end and any dark parts around the bottom.\u00a0<\/span>Cut the artichoke in half lengthwise. With a spoon or melon baller, scoop out and discard the hairy choke and thorny inner leaves.Finely slice the artichokes and drop the slices into acidulated water.<\/p>\n<figure id=\"attachment_7064\" aria-describedby=\"caption-attachment-7064\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/PaccheriArtichoke3.jpg\"><img decoding=\"async\" class=\"wp-image-7064 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/PaccheriArtichoke3.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-7064\" class=\"wp-caption-text\">Clean, trim and slice the artichokes<\/figcaption><\/figure>\n<p>Peel the shallot (or leek) and finely chop it.<\/p>\n<figure id=\"attachment_7065\" aria-describedby=\"caption-attachment-7065\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/PaccheriArtichoke2.jpg\"><img decoding=\"async\" class=\"wp-image-7065 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/PaccheriArtichoke2.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-7065\" class=\"wp-caption-text\">Slice the leek<\/figcaption><\/figure>\n<p>In the meanwhile, bring a large pot full of salted water to the boil.<\/p>\n<p>Put a little bit of\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive Oil &#8220;Il Vero&#8221;<\/a> in a large pan and brown the shallot on a medium heat for 5 minutes. Add the cubes of smoked bacon and turn up the heat, fry for a few minutes. Then, blend with white wine.<\/p>\n<figure id=\"attachment_7066\" aria-describedby=\"caption-attachment-7066\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/PaccheriArtichoke4.jpg\"><img decoding=\"async\" class=\"wp-image-7066 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/PaccheriArtichoke4.jpg\" alt=\"\" width=\"295\" height=\"167\" \/><\/a><figcaption id=\"caption-attachment-7066\" class=\"wp-caption-text\">Brown the leek and bacon<\/figcaption><\/figure>\n<p>Remove the artichokes slices from the acidulated water and add them to the pan with a pinch of salt. Pour a ladle of boiling water over the pasta in the pan, turn down the heat and let it cook for 10-12 minutes, until soft, stirring from time to time.<\/p>\n<figure id=\"attachment_7067\" aria-describedby=\"caption-attachment-7067\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/PaccheriArtichoke5.jpg\"><img decoding=\"async\" class=\"wp-image-7067 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/PaccheriArtichoke5.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-7067\" class=\"wp-caption-text\">Add the artichokes to the pan<\/figcaption><\/figure>\n<p>Cook the <a href=\"https:\/\/tastewithgusto.ie\/shop\/paccheri\/\">Paccheri Pasta<\/a> in the boiling salted water.<\/p>\n<p>Drain the <a href=\"https:\/\/tastewithgusto.ie\/shop\/paccheri\/\">paccheri<\/a> and pour them in the can with the artichokes, stirring on a medium heat.<\/p>\n<figure id=\"attachment_7068\" aria-describedby=\"caption-attachment-7068\" style=\"width: 295px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/PaccheriArtichoke6.jpg\"><img decoding=\"async\" class=\"wp-image-7068 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/02\/PaccheriArtichoke6.jpg\" alt=\"\" width=\"295\" height=\"166\" \/><\/a><figcaption id=\"caption-attachment-7068\" class=\"wp-caption-text\">Add the\u00a0<a href=\"https:\/\/tastewithgusto.ie\/shop\/paccheri\/\">paccheri<\/a> into the pan with the artichoke dressing<\/figcaption><\/figure>\n<p>In the meanwhile, beat the yolks in a bowl with grated Pecorino cheese and pepper until you obtain a thick sauce.
