It was prepared during the &#8220;Feast of decorations&#8221;, a festival established in occasion of the tenth anniversary of a parish. The name derives from the custom families had of hanging colored drapes on their windows to celebrate. The parishioners&#8217; houses were open to visits by neighbours and acquaintances. Guests prepared the &#8220;rice cake&#8221; cut into small diamonds, offering each piece with a toothpick. See <a href=\"http:\/\/www.tastebologna.net\/blog\/italian-rice-cake-recipe\">here<\/a> for more info.<\/p>\n<p>This rice cake is typical of Bologna but is also prepared throughout the Emilia-Romagna region.<\/p>\n<p>It is gluten-free.<\/p>\n<h3>Ingredients:<\/h3>\n<p>&nbsp;<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/07\/rice_cake_tste_with_gusto_ingredients.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-7499\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/07\/rice_cake_tste_with_gusto_ingredients-300x225.jpg\" alt=\"taste_with_gusto_recipe_ingredients_rice_cake\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p>Rice (type Roma, or Arborio) 200 g<\/p>\n<p>Fresh whole milk 750 ml<\/p>\n<p>Sugar 180 g<\/p>\n<p>Medium eggs 3<\/p>\n<p>Raisins 50 g<\/p>\n<p>Pine nuts 50 g<\/p>\n<p>Rum 10 ml (you can use extra milk instead of rum)*<\/p>\n<p>\u00bd Lemon zest<\/p>\n<p>Salt up to 1 pinch<\/p>\n<p>Butter 40 g<\/p>\n<p>Cannella powder \u00bd teaspoon<\/p>\n<p>*Especially if serving to children<\/p>\n<h3>Equipment:<\/h3>\n<p>1 bowl, whisk, tart pan, 1 medium saucepan, baking paper.<\/p>\n<h3>Preparation:<\/h3>\n<p>Soak raisins in rum (or milk).<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/07\/taste_with_gusto_raisins_recipe.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-7500\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/07\/taste_with_gusto_raisins_recipe-300x225.jpg\" alt=\"taste_with_guto_raisins_recipe_tate\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p>Pour milk and 50 gr of sugar into saucepan and bring to boil over medium heat. When milk comes to a boil, add the rice.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/07\/taste_with_gusto_recipe_rice_milk.jpg\"><img decoding=\"async\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p>Simmer rice over low heat until it has absorbed all the milk and has a consistency similar to a dry risotto.<\/p>\n<p>Pour rice into a large, shallow container to allow it to cool.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/07\/taste_with_gusto_recipe_cooked_rice.jpg\"><img decoding=\"async\" class=\"alignnone height=\"225\" \/><\/a><\/p>\n<p>Pre-heat oven to 180 degrees.<\/p>\n<p>Meanwhile, in a bowl, beat the eggs together with remaining sugar.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/07\/taste_with_gusto_recipe_rice_cake_eggs_sugar.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-7503\" height=\"225\" \/><\/a><\/p>\n<p>Add the drained raisins, lemon zest, melted butter, 35 gr of pine nuts (reserve 1 tablespoon pine nuts for decorations), and half a teaspoon of cinnamon powder.<\/p>\n<p>Add the now cold rice to the bowl and mix the ingredients well.<\/p>\n<p><a \/><\/a><\/p>\n<p>and decrease oven\u00a0temperature to 160 degrees.\u00a0 Cook for about 40 minutes.<\/p>\n<p>Raise oven temperature to 180 degrees and cook for an additional 20 minutes, until the rice cake is golden on the surface.<\/p>\n<p>Take rice cake out of the oven\u00a0and place on a wire rack without removing from the mold.<\/p>\n<p><a
