{"id":7749,"date":"2018-08-30T20:10:22","date_gmt":"2018-08-30T20:10:22","guid":{"rendered":"https:\/\/cookwithgusto.com\/?p=7749"},"modified":"2018-09-12T16:01:22","modified_gmt":"2018-09-12T16:01:22","slug":"vegan-long-fusilli-dellamicizia-among-friends","status":"publish","type":"post","link":"https:\/\/cookwithgusto.com\/?p=7749","title":{"rendered":"Vegan long fusilli pasta with sauteed vegetables and carrot puree"},"content":{"rendered":"<h3>Long fusilli pasta with sauteed vegetables and carrot puree, also called \u201cdell\u2019amicizia\u201d (\u201camong friends\u201d)<\/h3>\n<p>&nbsp;<\/p>\n<p>Long fusilli dell&#8217;amicizia is a vegan recipe, simple but with a rich and well-balanced flavour.\u00a0 The key to achieving the depth and balance lies in cooking the vegetables properly, so they are soft but still retain their nutritional value.<\/p>\n<p>The carrots pureed with some of their broth gives the dish a creamy sweetness.\u00a0 The basil adds a final fresh note that compliments perfectly the vegetables and olive oil.<\/p>\n<p>You can add extra zing to the recipe with chilli peppers, sweet paprika, cumin, or grated cheese (for your non-vegan guests).<\/p>\n<p>The recipe for the sauce \u201c<em>among friends<\/em>\u201d is more than twenty years old and was created for the occasion of a charity benefit dinner attended by a large number of people.\u00a0 Some of the guests were vegan, and others vegetarian.\u00a0 It is a perfect dish to serve when your dinner guests have different diets, as it is sure to please all.<\/p>\n<p>Hence the name \u201cla pasta dell\u2019amicizia\u201d or pasta \u201camong friends\u201d.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<\/h4>\n<p>Serves 2<\/p>\n<p>180 g of <a href=\"https:\/\/tastewithgusto.ie\/shop\/long-fusilli\/\">Gragnano long fusilli<\/a><\/p>\n<p>2 carrots<\/p>\n<p>2 aubergines<\/p>\n<p>3 tablespoon <a href=\"https:\/\/tastewithgusto.ie\/shop\/7-olive-oils\/\">extra virgin olive oil<\/a><\/p>\n<p>2 courgettes<\/p>\n<p>1 clove of garlic<\/p>\n<p>salt and white pepper<\/p>\n<p>a few basil leaves<\/p>\n<p style=\"background: white; As an alternative and to get additional flavour, you can top your sauce with chopped arugula.<\/p>\n<p>For an original touch, you can sprinkle some <a href=\"https:\/\/tastewithgusto.ie\/shop\/black-olive-oven-baked\/\">olive<\/a> crumbs on top of your plate.
