Thanks to its unmistakable taste it is an excellent ingredient for sweet and savory recipes. It can be used to prepare many different dishes for Halloween.<\/p>\n<p>Originally from the Americas, pumpkins are widely used in Italian cuisine, particularly in the cities of Mantova and Ferrara.<\/p>\n<p>Pumpkins are rich in vitamin A and are often recommended in low-calorie diets.<\/p>\n<p>This week\u2019s recipe features pumpkin, mushrooms, and salame, to create a delicious contrast between the sweet notes of the pumpkin and the tangy, salty salami.<\/p>\n<p>In this recipe, the pumpkin is baked in the oven; this way you will not need to peel it. Also, you can cook extra and store it in the fridge for future preparations like soups and tasty fillings.<\/p>\n<p>Servings 3<\/p>\n<h4>Ingredients<\/h4>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/10\/Fusilli_zucca_funghi_salame_recipe_taste_with_gusto_ingredients.jpg\"><img decoding=\"async\" class=\"size-full wp-image-8093 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/10\/Fusilli_zucca_funghi_salame_recipe_taste_with_gusto_ingredients.jpg\" alt=\"Fusilli_zucca_funghi_salame_recipe_taste_with_gusto_ingredients\" width=\"300\" height=\"259\" \/><\/a><\/p>\n<p><a href=\"https:\/\/tastewithgusto.ie\/shop\/fusilloni\/\">Fusilli<\/a> or other short pasta<\/p>\n<p><a href=\"https:\/\/tastewithgusto.ie\/shop\/7-olive-oils\/\">Extra virgin olive oil<\/a> 2 tablespoons<\/p>\n<p>Chopped mushrooms 100 gm.<\/p>\n<p>Minced garlic 1 teaspoon<\/p>\n<p>Sweet pumpkin 400 gm.<\/p>\n<p>Thinly sliced Italian salame (Milano or Toscano) gm. 50<\/p>\n<p>Salt and pepper to taste<\/p>\n<p>Fresh sage 3 leaves<\/p>\n<p>Rosemary 1 teaspoon<\/p>\n<p>Freshly grated Parmigiano cheese (optional)<\/p>\n<h4>Equipment<\/h4>\n<p>1 baking tray, 1 bowl, parchment paper, 1 medium saucepan, 1 nonstick pan, 1 chopping board, 1 knife.<\/p>\n<h4>Instructions<\/h4>\n<p>Preheat oven to 180 degrees.<\/p>\n<p>Wash the pumpkin but do not peel it. Cut into thick slices and remove seeds.<\/p>\n<p>Line a pan with parchment paper and arrange the slices in the pan in one layer.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/10\/Fusilli_zucca_funghi_salame_recipe_taste_with_gusto_cook_pumpkin_in_oven.jpg\"><img decoding=\"async\" class=\"size-full wp-image-8095 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/10\/Fusilli_zucca_funghi_salame_recipe_taste_with_gusto_cook_pumpkin_in_oven.jpg\" alt=\"Fusilli_zucca_funghi_salame_recipe_taste_with_gusto_cook_pumpkin_in_oven\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p>Drizzle pumpkin with olive oil (do not add salt yet). Roast until soft, then season with salt and pepper.<\/p>\n<p>Meanwhile, wash mushrooms and chop finely, and chop sage with rosemary.<\/p>\n<p>Put garlic and oil in a non-stick pan and heat over medium heat. Cook pasta according to package directions.<\/p>\n<p>Reserve some of the pasta water if you would like the sauce to be slightly thinner.<\/p>\n<p>Toss the sauce with the pasta and serve with freshly grated Parmigiano cheese.
