They are traditionally prepared with veal meat but many variations exist. Sometimes the saltimbocca is cooked rolled up, although most recipes call for thinly sliced meat, which guarantees greater browning surface and faster cooking.<\/p>\n<h4>Ingredients<\/h4>\n<h3><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/10\/Saltimbocca_alla_romana_taste_with_gusto_recipe_ingredients.jpg\"><img decoding=\"async\" class=\"size-full wp-image-8120 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/10\/Saltimbocca_alla_romana_taste_with_gusto_recipe_ingredients.jpg\" alt=\"Saltimbocca_alla_romana_taste_with_gusto_recipe_ingredients\" width=\"300\" height=\"243\" \/><\/a><\/h3>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>large beef escalopes 3<\/li>\n<li>fresh sage 6 leaves<\/li>\n<li>high-quality prosciutto 3 slices<\/li>\n<li>unsalted butter 1 tablespoon<\/li>\n<li><a href=\"https:\/\/tastewithgusto.ie\/shop\/7-olive-oils\/\">extra virgin olive oil<\/a> 1 tablespoon<\/li>\n<li>a half glass of dry white wine<\/li>\n<\/ul>\n<p>Ingredients for oven-roasted potatoes, instructions here following.<\/p>\n<ul>\n<li>medium potatoes 4<\/li>\n<li>salt 1 teaspoon<\/li>\n<li>extra virgin olive oil 2 tablespoons<\/li>\n<li>chopped rosemary 1 tablespoon<\/li>\n<\/ul>\n<h4>Method<\/h4>\n<p>Cut the beef escalopes into 2 halves to get 6 pieces.<br \/>\nPlace the beef escalopes on a chopping board, cover with clingfilm and, using a meat tenderizer or a rolling pin, pound them until they are about 5mm thick.\u00a0 Discard the clingfilm.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/10\/Saltimbocca_alla_romana_taste_with_gusto_recipe_meat_tenderizer.jpg\"><img decoding=\"async\" class=\"size-full wp-image-8121 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/10\/Saltimbocca_alla_romana_taste_with_gusto_recipe_meat_tenderizer.jpg\" alt=\"Saltimbocca_alla_romana_taste_with_gusto_recipe_meat_tenderizer\" width=\"300\" height=\"224\" \/><\/a><br \/>\nDredge each escalope in the flour and shake off excess flour.\u00a0 This will help achieve a thicker cooking base.<br \/>\nCut the prosciutto slices into 2 halves to get 6 pieces.<br \/>\nUsing a toothpick, secure a slice of prosciutto and a sage leaf on top of each escalope.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/10\/Saltimbocca_alla_romana_taste_with_gusto_recipe_ham_sage.jpg\"><img decoding=\"async\" class=\"size-full wp-image-8122 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/10\/Saltimbocca_alla_romana_taste_with_gusto_recipe_ham_sage.jpg\" alt=\"Saltimbocca_alla_romana_taste_with_gusto_recipe_ham_sage\" width=\"300\" height=\"265\" \/><\/a><br \/>\nPlace the butter and olive oil in a 12-inch skillet and melt over medium-high heat. Then add 6 escalopes, prosciutto-side down, into the pan.<br \/>\nCook about 1 minute on each side, until golden brown.<br \/>\nRemove the escalopes, place them on a plate, and cover with foil to keep warm.<br \/>\nPut the pan back on the heat, add the white wine and simmer for 1 minute until you have a shiny sauce.<br \/>\nPut saltimbocca back in the pan, mix with the sauce and cook for an additional 2 minutes.
