This week&#8217;s recipe is one of the best and is also easy to prepare.<\/p>\n<p>Adding two small potatoes give the gnocchi a deliciously silky consistency. The potato starch in the recipes guarantees that the dough stays firm enough.<\/p>\n<p>If you want to prepare the gnocchi but you have little time, you can use canned and pre-cooked squash puree.<\/p>\n<h4>Ingredients<\/h4>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/11\/taste_with_gusto_pumpkin_gnocchi_recipe_ingredients.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-8208 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/11\/taste_with_gusto_pumpkin_gnocchi_recipe_ingredients.jpg\" alt=\"taste_with_gusto_squash_gnocchi_recipe_ingredients\" width=\"300\" height=\"246\" \/><\/a><\/p>\n<p>Small potatoes 2<\/p>\n<p>Squash 500 gm. (or as an alternative 1 can ready to use squash puree)<\/p>\n<p>Egg yolk 1<\/p>\n<p>All-purpose flour 150 gm.<\/p>\n<p>Potato starch 50 gm.<\/p>\n<p>Semolina flour 1 tablespoon (optional)<\/p>\n<p>Salt 1 pinch<\/p>\n<p>Cinnamon 1 pinch<\/p>\n<p>Nutmeg 1 pinch<\/p>\n<h4>Sage and butter sauce<\/h4>\n<p>Unsalted butter 2 tablespoons<\/p>\n<p>Sage leaves 3<\/p>\n<p>Grated Parmigiano Reggiano or Grana Padano as you like<\/p>\n<h4>Equipment<\/h4>\n<p>1 baking tray, 1 bowl, parchment paper, 1 large pot, 1 non-stick pan, 1 chopping board, 1 knife, 1 potato masher, 1 fork.<\/p>\n<h4>Method<\/h4>\n<p>Boil potatoes with their skin in salted water until they are soft.<\/p>\n<p>Peel and pass through a potato masher, pressing them directly into the bowl.<\/p>\n<p>If you are not using pre-cooked squash, then prepare roasted squash in the oven following our recipe <strong><a href=\"https:\/\/cookwithgusto.com\/pumpkin-mushroom-salame-pasta\/\">here.<\/a><\/strong><\/p>\n<p>Peel and pass the\u00a0cooked squash through a potato masher, adding it to the same bowl as mashed potatoes.<\/p>\n<p>&nbsp;<\/p>\n<p>Mix squash and potato puree, then add the other ingredients: all-purpose flour, semolina, potato starch, egg yolk, nutmeg, cinnamon, and a pinch of salt.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/11\/taste_with_gusto_pumpkin_gnocchi_recipe_mix_dough300.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-8212 size-full\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/11\/taste_with_gusto_pumpkin_gnocchi_recipe_mix_dough300.jpg\" alt=\"taste_with_gusto_squash_gnocchi_recipe_mix_dough300\" width=\"300\" height=\"326\" srcset=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/11\/taste_with_gusto_pumpkin_gnocchi_recipe_mix_dough300.jpg 300w, https:\/\/cookwithgusto.com\/wp-content\/uploads\/2018\/11\/taste_with_gusto_pumpkin_gnocchi_recipe_mix_dough300-276x300.jpg 276w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Quickly mix the dough but do not over knead.<\/p>\n<p>Place the squash mix on a chopping board dusted with flour.\u00a0Press the dough with your hands and add flour if needed.<\/p>\n<p>Cut dough into long strips, about 1.5 cm thick.
