It is also light and very easy to prepare.<\/p>\n<p>\u201cAcqua pazza\u201d means crazy water in Italian. Acqua pazza\u00a0is used in Italian cuisine to refer to a recipe for poached white fish, or to refer to the broth used to poach it. There are many different versions, from lightly herbed broths to thicker tomato-based sauces.<\/p>\n<p>Acqua pazza\u00a0was a very popular dish with tourists on the island of Capri in the 1960s. (2 medium-sized fish)<\/p>\n<p>Cherry tomatoes 300 gr<\/p>\n<p>Parsley<\/p>\n<p>Garlic 4 cloves<\/p>\n<p><a href=\"https:\/\/tastewithgusto.ie\/shop\/7-olive-oils\/\">Extra virgin olive oil<\/a> 2 tablespoons<\/p>\n<p>Salt and pepper as needed<\/p>\n<p>Water, 1 cup<\/p>\n<p>White wine, 1 cup<\/p>\n<p><a href=\"https:\/\/tastewithgusto.ie\/shop\/pitted-rosate-olives\/\">Black olives<\/a>, 1 cup<\/p>\n<p>Chili pepper optional<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2019\/01\/sea_bream_acqua_pazza_recipe_ingredients.jpg\"><img decoding=\"async\" class=\"size-full wp-image-8396 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2019\/01\/sea_bream_acqua_pazza_recipe_ingredients.jpg\" alt=\"sea_bream_acqua_pazza_recipe_ingredients\" width=\"300\" height=\"164\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<h4>Equipment<\/h4>\n<p>Rectangular baking dish (or 1 non-stick pan as an alternative), 1 chopping board, 1 knife, aluminium foil or parchment paper.<\/p>\n<h4>Preparation<\/h4>\n<p>First clean the sea bream. \u00a0Scrape off scales, remove the fins (you can leave the caudal fin to check later if the fish is cooked), and remove the gut.\u00a0 Better yet, you can ask the fishmonger to clean the fish.\u00a0 But leave them whole \u2013 you must filet it only after cooking.<\/p>\n<p>Heat the oven to 220 degrees.<\/p>\n<p>Open the stomach cavity and put a pinch of salt, a clove of garlic, and a few parsley leaves (coarsely chopped) inside.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2019\/01\/sea_bream_acqua_pazza_recipe_parsley.jpg\"><img decoding=\"async\" class=\"size-full wp-image-8397 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2019\/01\/sea_bream_acqua_pazza_recipe_parsley.jpg\" alt=\"sea_bream_acqua_pazza_recipe_parsley\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p>Coat the bottom of the baking dish (or a pan) with the extra virgin olive oil, then set the sea bream in the dish.<\/p>\n<p>Wash the tomatoes and cut them into wedges. Put them in the pan with the two cloves of garlic, whole parsley leaves, black olives, salt, pepper (or fresh chili if you like), water and white wine.\u00a0 Note, the liquid should not cover the fish \u2013 rather, it should be at a level a bit less than half the height of the fish.<\/p>\n<p>Bake for about 20-25 minutes.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2019\/01\/sea_bream_acqua_pazza_recipe_cooked.jpg\"><img decoding=\"async\" class=\"size-full wp-image-8399 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2019\/01\/sea_bream_acqua_pazza_recipe_cooked.jpg\" alt=\"sea_bream_acqua_pazza_recipe_cooked\" width=\"300\" height=\"232\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>To check if the fish is cooked, try to tear off the caudal fin. If\u00a0it comes off easily, then the sea bream is cooked. If it resists, then the fish needs to continue cooking for a few more minutes.<\/p>\n<p>When the sea bream is cooked, remove the pan from the oven, lay the fish on a plate, carefully remove the skin, and divide the sea bream into fillets. Proceed in the same way, cooking over a flame by placing a lid on the pan.<\/p>\n<p>The cooking sauce is delicious and in case you have some extra, you can serve it with spaghetti, linguine, or other pasta as you like.<\/p>\n<p>You can use sea bream, seabass, snapper, or other fish as you like. It is important that you buy a fresh whole fish. Then, you adapt the cooking time to the size.
