This recipe is easy and rich in taste \u2013 with just a few calories. The meat will remain tender, juicy, and very tasty thanks to the marinade and the aromatic herbs.<\/p>\n<h5>Ingredients<\/h5>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2019\/08\/Chicken_breast_with_aubergines_recipe_ingredients.jpg\"><img decoding=\"async\" class=\"size-full wp-image-8956 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2019\/08\/Chicken_breast_with_aubergines_recipe_ingredients.jpg\" alt=\"Chicken_breast_with_aubergines_recipe_ingredients\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p>Chicken Breast 4 (about 120 gr. each)<\/p>\n<p>Aubergines 2 (small ones)<\/p>\n<p>Ripe tomatoes 150 gr.<\/p>\n<p>Onion (red) 100 gr.<\/p>\n<p>Lemon 1<\/p>\n<p>Mix of dried aromatic spices 1 tsp<\/p>\n<p>Parsley at your taste<\/p>\n<p><strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/8-balsamic-vinegars\/\">Balsamic vinegar <\/a><\/strong>2 tablespoons<\/p>\n<p><strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/7-olive-oils\/\">Extra virgin olive oil<\/a><\/strong> 20 ml.<\/p>\n<p>Salt and pepper<\/p>\n<h5>Equipment<\/h5>\n<p>Chopping board, knife, parchment paper, baking tray, medium non-stick pan, small bowl, 1 dish.<\/p>\n<h5>Preparation<\/h5>\n<p>Put the chicken fillets on a plate and season with the lemon juice, oil, the mix of dried aromatic spices, salt, and pepper.\u00a0 Let rest 10-15 minutes.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2019\/08\/Chicken_breast_with_aubergines_recipe_marinate.jpg\"><img decoding=\"async\" class=\"size-full wp-image-8957 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2019\/08\/Chicken_breast_with_aubergines_recipe_marinate.jpg\" alt=\"Chicken_breast_with_aubergines_recipe_marinate\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p>Meanwhile, prepare the aubergines. Pour about 3 tablespoons of water into the pan, cover and cook for about 5 minutes. Test cooking with a fork; they are perfectly cooked when the fork slides in easily. Just wash, cut, carve, add oil and bake in a baking pan covered with parchment paper.<\/p>\n<p>If you do not have a mix of dried aromatic herbs, you can prepare one quickly. Mix some minced garlic with oregano, basil, rosemary, and a finely chopped <strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/sun-dried-tomatoes\/\">dried tomato<\/a><\/strong>.<\/p>\n<p>If you are looking for a vegetarian version, you can replace the chicken with some cooked legumes such as beans or chickpeas (previously mixed with the mix of herbs).
