A great idea to start the new year with a healthy dish, after the rich Christmas holiday meals.<\/p>\n<h5>Ingredients<\/h5>\n<p>Fresh mushrooms 400 g (button, crimini, oyster, or other varieties \u2013 a mix is good)<\/p>\n<p>Potatoes 4<\/p>\n<p>Leek 1 small piece (or a small onion)<\/p>\n<p>Parsley 1 bunch<\/p>\n<p>Boiled cannellini beans 200 g (canned beans are also fine)<\/p>\n<p><strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/7-olive-oils\/\">Extra virgin olive oil<\/a><\/strong> 2 tablespoon<\/p>\n<p>Vegetable broth one liter (or water)<\/p>\n<p>Pepper and salt<\/p>\n<p>1 Bay leaf<\/p>\n<h5>Optional, for croutons<\/h5>\n<p>2 or 3 slices of stale bread<\/p>\n<p>2 tablespoons of grated parmigiano cheese<\/p>\n<p>1 tablespoon of <strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/7-olive-oils\/\">extra virgin olive oil<\/a><\/strong><\/p>\n<p>2 tablespoons of <strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/garlic-pate\/\">Garlic Pat\u00e9<\/a>\u00a0<\/strong>or\u00a0<strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/hot-pepper-spread\/\">Hot Chilli Peppers Spread, <\/a><\/strong>or<strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/garlic-pate\/\">\u00a0Garlic Pat\u00e9, <\/a><\/strong>or\u00a0mushroom pat\u00e9.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/01\/Recipe_mushrooms_potatoes_beans_taste_with_gusto_ingredients.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9283 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/01\/Recipe_mushrooms_potatoes_beans_taste_with_gusto_ingredients.jpg\" alt=\"Recipe_mushrooms_potatoes_beans_taste_with_gusto_ingredients\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<h5>Equipment<\/h5>\n<p>Chopping board, knife, medium sauce-pan, baking tray, parchment paper, ladle.<\/p>\n<h5>Preparation<\/h5>\n<p>Wash the leek, slice it, then brown it in a pot with the olive oil, taking care that it does not burn.<\/p>\n<p>Meanwhile, peel the potatoes, wash them carefully and cut them into cubes. Then carefully clean the mushrooms, separate the heads from the stems, and cut into small slices and pieces.<\/p>\n<p>When the leek has browned add the potatoes, mushrooms and beans. Season for a few moments while stirring, then add salt and pepper.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/01\/Recipe_mushrooms_potatoes_beans_taste_with_gusto_sauce_pan.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9284 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/01\/Recipe_mushrooms_potatoes_beans_taste_with_gusto_sauce_pan.jpg\" alt=\"Recipe_mushrooms_potatoes_beans_taste_with_gusto_sauce_pan\" width=\"300\" height=\"262\" \/><\/a><\/p>\n<p>Pour the stock until the ingredients are covered and keep some stock aside if needed. Cut the bread into cubes of about half a centimeter. Place them evenly on a dripping pan covered with parchment paper and drizzle with olive oil. Add the grated Parmigiano cheese, season with salt, and cook them in a very hot oven for a few minutes. When they are ready, put them in a bowl and add the mushroom pat\u00e9.
