While they cook they will fill the kitchen with an irresistible aroma.\u00a0 (Open the windows and you can share it with people in the street&#8230; as has happened to us!)<\/p>\n<h5>Ingredients for 3 people<\/h5>\n<p>Medium aubergines 3<\/p>\n<p>Peeled tomato 1 can<\/p>\n<p>Provolone cheese (or light Cheddar, emmenthal, mozzarella, or Edamer) 200 gr.<\/p>\n<p>Grated pecorino (or grated Parmesan or Grana Padano) 2 tbsp<\/p>\n<p>Dried oregano 1 pinch (or a sprig of fresh oregano)<\/p>\n<p>Fresh basil 1 bunch<\/p>\n<p>Parsley a bunch<\/p>\n<p><strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra virgin olive oil<\/a><\/strong>\u00a0&#8220;Il Vero&#8221;\u00a0 2 tbsp<\/p>\n<p>Fine salt and pepper<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/05\/Baked_aubergines_with_tomato_and_cheese_ingredients.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9577 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/05\/Baked_aubergines_with_tomato_and_cheese_ingredients.jpg\" alt=\"Baked_aubergines_with_tomato_and_cheese_ingredients\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<h5>Equipment<\/h5>\n<p>1 baking pan, 1 chopping board, 1 knife.<\/p>\n<h5>Preparation<\/h5>\n<p>Start by carefully washing the aubergines under running water and drying them with kitchen paper. Then remove the stalk and cut them in half lengthwise.<\/p>\n<p>Score the pulp side of each aubergine with a knife on the diagonal to create a grid pattern.\u00a0 The cuts should be deep to help the aubergines absorb the flavours while cooking, but not all the way to the skin.
