The soft and full-bodied sauce is packed with flavour, but since it is made almost completely of vegetables it is at the same time light and healthy.<\/p>\n<h5>For 2 people<br \/>\nIngredients<\/h5>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/06\/Pasta_with_arrabbiata_and_roasted_vegetables_sauce_ingredients.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9623 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/06\/Pasta_with_arrabbiata_and_roasted_vegetables_sauce_ingredients.jpg\" alt=\"Pasta_with_arrabbiata_and_roasted_vegetables_sauce_ingredients\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p>pasta 160 gr (<strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/fusilloni\/\">Gragnano fusilloni <\/a><\/strong>or other short pasta as you like)<br \/>\n<strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/arrabbiata-sauce\/\">Pralina Arrabbiata sauce<\/a><\/strong> 1 jar of 200 gr.<br \/>\nFresh cherry tomatoes 6<br \/>\n1\/2 pepper<br \/>\nonion \u00bd<br \/>\ncourgette 1<br \/>\naubergine 1 small (or half large)<br \/>\n<strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/7-olive-oils\/\">extra virgin olive oil<\/a><\/strong> 1 tbsp<br \/>\naromatic herbs to taste (parsley, oregano, basil, etc)<br \/>\nsalt and pepper to taste.<\/p>\n<h5>Equipment<\/h5>\n<p>Chopping board, knife, non-stick pan, 1 tablespoon, 1 large saucepan, 1 baking tray.<\/p>\n<h5>Preparation<\/h5>\n<p>Pre-heat the oven to about 200 \u00b0 C.<br \/>\nClean the vegetables and dice them into small cubes, mirepoix cut (<strong><a href=\"https:\/\/cookwithgusto.com\/make-different-vegetable-cuts\/\">see details on our blog <\/a><\/strong>for the mirepoix cut), except the onions which must be cut into thin rings. Mince the herbs.<br \/>\nPut the oil in a bowl, add the herbs and the vegetables, and mix well with a spoon.
