{"id":963,"date":"2018-05-16T19:10:42","date_gmt":"2018-05-16T19:10:42","guid":{"rendered":"http:\/\/cookwithgusto.com\/?p=963"},"modified":"2018-05-17T22:13:16","modified_gmt":"2018-05-17T22:13:16","slug":"chicken-breast-al-cartoccio","status":"publish","type":"post","link":"https:\/\/cookwithgusto.com\/?p=963","title":{"rendered":"Chicken Breast &#8220;Al Cartoccio&#8221;"},"content":{"rendered":"<p>In one of my shopping expeditions, I bought some free range <a href=\"http:\/\/www.freerangemeats.ie\/\" target=\"_blank\" rel=\"noopener\">Chicken breast from my friend Ray<\/a> at People&#8217;s Park in Dun Laoghaire.<\/p>\n<p>I want it to cook the chicken breasts in an innovative but traditional way, so\u00a0decided to prepare it \u201cal cartoccio\u201d as we say in Italy&#8230;\u00a0I started to experiment and came up with a recipe that everyone loves!<\/p>\n<p>Once they taste it, you&#8217;ll know why&#8230;<\/p>\n<p>Al Cartoccio basically\u00a0means wrapped in tin foil and baked. This way,\u00a0 the chicken never dries out and still retains all the flavours added to it even if you cook it for a long time. I bet that you will enjoy the result of this recipe.<\/p>\n<p>For my recipe, I used\u00a0<a href=\"http:\/\/tastewithgusto.ie\/shop\/pronto-spaghetti-ready-spaghetti\/\">Pronto Spaghetti<\/a>\u00a0a sauce that has evolved from a famous Italian recipe \u201cAglio, Olio e Peperoncino\u201d ( Garlic, Olive Oil and Hot Chilli) but with the addition of sun-dried tomatoes. This delicious sauce can give a boost of taste to any of your recipes.\u00a0 Perfect for meat or fish dishes or to spread the pat\u00e9 on tarallini, bruschetta, crostini or sandwiches. You can also add few tablespoons to your soups and stews&#8230;<\/p>\n<p>For a delicious pasta dish, simply add the sauce on a saucepan and mix it with a tablespoon of the pasta cooking water to dilute the sauce and then add the drained pasta to the saucepan, then mix well.<\/p>\n<h2>\u00a0How to Cook Chicken Breast &#8220;Al Cartoccio&#8221;<\/h2>\n<p>Preparation time: 10 min<\/p>\n<p>Cooking time: 45 min<\/p>\n<p><strong>Ingredients for 2 servings:\u00a0<\/strong><\/p>\n<p><a href=\"http:\/\/tastewithgusto.ie\/shop\/pronto-spaghetti-ready-spaghetti\/\">Pronto Spaghetti &#8211;<\/a> \u00bd jar (because I\u00a0like it slightly hot)<\/p>\n<p>Lemon &#8211; \u00bd<\/p>\n<p>Garlic &#8211; 2 cloves<\/p>\n<p>Marjoram &#8211; 2 ts<\/p>\n<p>Bay Leaf &#8211; 2<\/p>\n<p><a style=\"color: #21759b;\" href=\"http:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive oil<\/a>\u00a0\u00a0&#8211; 20 ml<\/p>\n<p>Green olives &#8211; pitted 30<\/p>\n<p>Cherry tomatoes on the vine &#8211; 9<\/p>\n<p>Salt and pepper<\/p>\n<p>Chicken breast &#8211; 3<\/p>\n<p>&nbsp;<\/p>\n<p><strong>As a side dish:<\/strong><\/p>\n<p>A bunch of asparaguses<\/p>\n<p><a href=\"http:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive oil<\/a> 1 tbs<\/p>\n<p>Salt and pepper<\/p>\n<p>Pre-heat the oven at 220\u00b0C<\/p>\n<p>Start to prepare the dressing. In a food processor put the\u00a0<a href=\"http:\/\/tastewithgusto.ie\/shop\/pronto-spaghetti-ready-spaghetti\/\">Pronto Spaghetti<\/a> ( if you want it a little bit hot; otherwise, use <a href=\"http:\/\/tastewithgusto.ie\/shop\/sundried-tomato-pesto\/\">Sun-dried Tomato pate\u2019<\/a>), lemon, garlic, marjoram, bay leaves, and\u00a0<a href=\"http:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive oil<\/a>. If you like, make a cut in the breast and fill it with the sauce. This will be richer in taste.<\/p>\n<p>Now put the breast on a tin foil. Add more or less 15 pitted\u00a0olives, 3 small tomatoes cut in quarters, salt, pepper and a drizzle of <a href=\"http:\/\/tastewithgusto.ie\/shop\/extra-virgin-olive-oil-il-vero-1-lt\/\">Extra Virgin Olive oil<\/a><\/p>\n<p>Wrap the tin foil around the chicken breast, leaving a little bit of space inside and put on an oven tray. Then, put the tray in the oven with the chicken.<\/p>\n<p>This will take 20 min or less.
