Perfect for these hot summer days.<\/p>\n<p>Salad of artichokes, mint, and pecorino.<\/p>\n<h5>Ingredients<\/h5>\n<p>Serves 2<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/Salad_artichokes_mint_pecorino_taste_with_gusto_ingredinets_recipe.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9806 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/Salad_artichokes_mint_pecorino_taste_with_gusto_ingredinets_recipe.jpg\" alt=\"Salad_artichokes_mint_pecorino_taste_with_gusto_ingredinets_recipe\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p><strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/grandmothers-artichokes\/\">Grandmother&#8217;s Recipe Wedged Artichokes<\/a><\/strong> 1 jar<\/p>\n<p>Small potatoes 6<\/p>\n<p>cooked chickpeas about 300 gr (1 jar)<\/p>\n<p>medium-aged pecorino cheese to taste<\/p>\n<p>fresh mint 1 sprig<\/p>\n<p>salt and black pepper<\/p>\n<p><strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/7-olive-oils\/\">extra virgin olive oil<\/a><\/strong> 1 tablespoon<\/p>\n<p><strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/white-balsamic-vinegar-prelibato\/\">Prelibato\u00a0White Balsamic Condiment<\/a><\/strong> 1 or 2 tbsp<\/p>\n<h5>Preparation<\/h5>\n<p>If you are using dried chickpeas, soak them overnight and cook in water.\u00a0 The procedure is <strong><a href=\"https:\/\/cookwithgusto.com\/cacciucco-di-ceci-chickpea-chard-stew\/\">here<\/a><\/strong>.<\/p>\n<p>Otherwise, if you use the canned chickpeas, drain them and proceed with the potatoes.<\/p>\n<p>Boil the potatoes. If they are small you can cook them whole for about 40 minutes. As an alternative, if the weather is hot or you have large potates, peel them and cut into thin slices, then cook for about 10-12 minutes. Season with extra virgin olive oil, salt, pepper, and vinegar. Mix well.<\/p>\n<p>Set aside a few mint leaves for decoration.
