You can prepare it in advance, and in fact, it is even more delicious after sitting in the fridge overnight as the flavours have time to mix.<\/p>\n<h5>Ingredients<\/h5>\n<p>serves 4<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/barley_tuna_pesto_salad_taste_with_gusto_dublin_ingredients.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9820 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/barley_tuna_pesto_salad_taste_with_gusto_dublin_ingredients.jpg\" alt=\"barley_tuna_pesto_salad_taste_with_gusto_dublin_ingredients\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p>barley 200 gr (you can also use the pre-cooked type)<br \/>\n<strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/basil-pesto\/\">basil pesto<\/a><\/strong> about half a jar<br \/>\nfresh or frozen tuna 2 slices of about 100 gr each (alternatively you can use canned tuna fish)<br \/>\nripe tomatoes 2 of about 80 gr. Each (or the same amount of cherry tomatoes)<br \/>\n<strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/7-olive-oils\/\">extra virgin olive oil<\/a><\/strong> 2\u00a0tablespoons<br \/>\nBay leaf a few leaves to cook barley<\/p>\n<h5>Equipment<\/h5>\n<p>1 non-stick pan, 1 chopping board, 1 bowl, 1 knife, 1 small bowl.<\/p>\n<h5>Preparation<\/h5>\n<p>Quickly wash the barley under running water, then cook in salted water after adding the salt and bay leaves.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/barley_tuna_pesto_salad_taste_with_gusto_dublin_cook_barley.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9821 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/barley_tuna_pesto_salad_taste_with_gusto_dublin_cook_barley.jpg\" alt=\"barley_tuna_pesto_salad_taste_with_gusto_dublin_cook_barley\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p>While the barley is cooking, wash the tomatoes, dice, and place them in a small bowl together with 2 teaspoons of pesto (you will use the remaining pesto to season the barley).<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/barley_tuna_pesto_salad_taste_with_gusto_dublin_chopped_tomatoesand_basilpesto.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9822 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/barley_tuna_pesto_salad_taste_with_gusto_dublin_chopped_tomatoesand_basilpesto.jpg\" alt=\"barley_tuna_pesto_salad_taste_with_gusto_dublin_chopped_tomatoesand_basilpesto\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p>Heat a non-stick pan, add a spoonful of extra virgin olive oil and sear the tuna quickly on both sides. The cooking time depends on the thickness of the tuna slices and your taste. If it is about 1 cm thick then it will be seared outside and warm inside after just 30-45 seconds of cooking per side.<br \/>\nAdd salt and pepper to the tuna, let cool, then cut into cubes then set aside on a plate.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/barley_tuna_pesto_salad_taste_with_gusto_dublin_non_atick_pan_tuna.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9823 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/barley_tuna_pesto_salad_taste_with_gusto_dublin_non_atick_pan_tuna.jpg\" alt=\"barley_tuna_pesto_salad_taste_with_gusto_dublin_non_atick_pan_tuna\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p>After about 20 minutes, check the barley; it should be slightly \u201cal dente.\u201d Cooking times vary according to the type of barley you have used; follow the instructions on the package.<br \/>\nDrain the barley and place in a large bowl.<br \/>\nAdd 2 tablespoons of olive oil, the remaining pesto, and the tuna.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/barley_tuna_pesto_salad_taste_with_gusto_dublin_mix_barley_salad_in_bowl.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9824 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/barley_tuna_pesto_salad_taste_with_gusto_dublin_mix_barley_salad_in_bowl.jpg\" alt=\"barley_tuna_pesto_salad_taste_with_gusto_dublin_mix_barley_salad_in_bowl\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p>Arrange the seasoned barley on a plate and garnish with a generous spoonful of the tomatoes and pesto you had previously prepared.<br \/>\nServe cold or lukewarm.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/300_barley_tuna_pesto_salad_taste_with_gusto_dublin_final_recipe.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9825 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/08\/300_barley_tuna_pesto_salad_taste_with_gusto_dublin_final_recipe.jpg\" alt=\"300_barley_tuna_pesto_salad_taste_with_gusto_dublin_final_recipe\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<h5>Tips<\/h5>\n<p>To make the recipe look even more irresistible, coat a small bowl with olive oil using a paper towel, fill it well with the barley and tuna mixture, press with a spoon, and turn it upside down onto a serving dish. This way you will create a nice barley dome to be decorated with chopped tomatoes and basil pesto.\u00a0As an alternative, you can substitute barley with other cereals as you like or with pasta.<br \/>\nIn case you want to store opened pesto, it is important to cover it with a thin layer of olive oil before storing in the fridge.
