Number one is <strong><a href=\"https:\/\/cookwithgusto.com\/penne-with-salmon\/\">\u201cpenne with salmon.\u201d<\/a><\/strong> Every day at least 10 people visit our blog to read this \u201coldy but goldy,\u201d and it appears on the first page if you run a Google search on the name.<br \/>\nToday we propose it again, together with some tips and variations.<\/p>\n<h5>Penne al Salmone (Penne pasta with Salmon)<\/h5>\n<h5>Ingredients for 4 people<\/h5>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/09\/penne_pasta_with_salmon_ingredients_taste_with_gusto.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9899 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/09\/penne_pasta_with_salmon_ingredients_taste_with_gusto.jpg\" alt=\"penne_pasta_with_salmon_ingredients_taste_with_gusto\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p><strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/penne-rigate\/\">Penne<\/a><\/strong> or Farfalle pasta shapes 400 gr<br \/>\nsmoked salmon (cut into strips) 250 gr<br \/>\nfresh cream 200 ml<br \/>\n<strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/7-olive-oils\/\">extra virgin olive oil (EVOO)<\/a><\/strong> 30 ml<br \/>\ngarlic gloves 2<br \/>\n<strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/sundried-tomato-pesto\/\">sundried tomato pat\u00e9<\/a><\/strong> or passata 1 tbsp<br \/>\nchopped fresh parsley a small bunch<br \/>\nsalt and pepper to taste<\/p>\n<h5>Equipment<\/h5>\n<p>1 non-stick pan, 1 chopping board, 1 knife, 1 medium sauce-pan, 1 drainer.<\/p>\n<h5>Preparation<\/h5>\n<p>Bring the water to a boil, then add 30 gr of coarse sea salt, and pasta.<br \/>\nStir it and meanwhile prepare the sauce (it will be ready in 10 minutes).<br \/>\nIn a non-stick pan, heat the oil and add the crushed garlic; mix until garlic becomes golden-brown (roughly 2 min), and then discard it. Cut salmon into thin strips and add to the pan, stir for a minute or two<br \/>\n<a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/09\/penne_pasta_with_salmon_ingredients_taste_with_gusto_salmon_pan.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9900 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/09\/penne_pasta_with_salmon_ingredients_taste_with_gusto_salmon_pan.jpg\" alt=\"penne_pasta_with_salmon_ingredients_taste_with_gusto_salmon_pan\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p>then add the fresh cream.<\/p>\n<p>Wash and finely chop the parsley and add it to the sauce (set some aside for garnish at the end), then add the sundried tomato pat\u00e9 (or passata) and a bit of freshly ground black pepper.<br \/>\nCover and simmer over low heat for about 3-4 minutes. The sauce will thicken and be ready as soon as the pasta is cooked.<\/p>\n<p><a href=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/09\/penne_pasta_with_salmon_ingredients_taste_with_gusto_cream_parsley_sundried_tomatoes.jpg\"><img decoding=\"async\" class=\"size-full wp-image-9901 alignnone\" src=\"https:\/\/cookwithgusto.com\/wp-content\/uploads\/2020\/09\/penne_pasta_with_salmon_ingredients_taste_with_gusto_cream_parsley_sundried_tomatoes.jpg\" alt=\"penne_pasta_with_salmon_ingredients_taste_with_gusto_cream_parsley_sundried_tomatoes\" width=\"300\" height=\"224\" \/><\/a><\/p>\n<p>Check the pasta, because it should be almost cooked. To obtain the right consistency, make sure to reserve some of the pasta water. After the pasta is mixed with the sauce and you realize that it seems too thick, you can add some of the reserved water.\u00a0Many types of <strong><a href=\"https:\/\/tastewithgusto.ie\/shop\/1-pasta\/\">pasta<\/a><\/strong> pair well with this sauce; for example you can use whole wheat pasta, or freshly made tagliolini, or linguine. If you are in a hurry, you can use small pasta shapes such as pennette or sedanini.<\/p>\n<p>You can use smoked salmon or use half fresh (or frozen) salmon and half-smoked salmon. Instead of parsley, you can use chives, or dill, fennel, or pink pepper berries.<br \/>\nBefore adding the cream, you can quickly cook the salmon with 1-2 tablespoons of still dry white wine, whiskey, cognac, or even vodka.<br \/>\nIn this version we have used fresh cream but you can prepare penne only with salmon, leaving out the cream.<\/p>\n<p>How to saut\u00e9 salmon penne: shallot, garlic or onion?<\/p>\n<p>I have used garlic, but the saut\u00e9 for penne with salmon can vary to your taste. Just keep in mind the following classic rules. Do not overcook garlic otherwise the taste becomes bitter; on the other hand, when raw it retains a strong and pungent taste. In the case of penne with salmon, you can also cook the whole cloves over low heat and remove once they have left their aroma in the oil. If you use onions for recipes you must cook them a bit longer.
