Here’s another easy to make recipe from our friends at Monelli Restaurant. Linguine with Sun-dried Tomato Sauce is a pasta dish that each member of your family will love!

Ingredients for 4 servings:

400 gr Linguine
200 gr Sun-dried Tomatoes
10/20 Capers
2 Tbs of Extra Virgin Olive Oil
1 Garlic clove minced
200 gr Passata or 1 jar Sugo Rustico Al Basilico (Country Basil Sauce)
100 gr Pitted green olives
Parsley, salt and pepper to taste

Preparation:

Boil 4 lt of water with 28 gr of salt (always same ratio 100gr pasta, 1 lt of water, 7 gr of sea salt).

Pour the linguine into the rumbling water and start to prepare the sauce.

Cut the Sun-dried Tomatoes in smaller  pieces

Heat the oil with the garlic. When it starts to change colour, add the sun-dried tomatoes and capers.

Heat it up for a minute or two then add the Passata or the ready sauce and cook for a few more minutes.

When it is almost ready, add the green olives.

Drain the pasta and add it to the sauce. Toss together for another minute.

Just before serving your Linguine with Sun-dried Tomato Sauce, sprinkle with parsley and pepper.

Serve immediately with a little of your favourite grated cheese (Here, Ivano used Ricotta Salata).
