Polpette al sugo – Meatballs in tomato sauce

Polpette al sugoThere’s always that recipe that reminds every Italian of his childhood. This recipe of Polpette al sugo (thanks to Elisa again), is an example. She grew up smelling it’s delicious smell. This recipe was handed down to her by her grandmother. Now, she’s passing it down to her lovely daughter Anita. She’s Elisa’s charming assistant as you can see in the photo on the right.

Polpette al sugo


300 gr beef mince

1 egg

50 gr dry grated bread

50 gr grated Parmisan cheese ( or Gavoi,or Pecorino Romano)


Salt q.b.

Pepper q.b.

Tomato passata

Extra virgin olive oil for frying


Put the minced beef in a large bowl. Add the egg, salt and pepper. Mix with a fork.



Add the cheese, bread, and parsley to the mixture. Mix thoroughly.


Knead the mix with your hands.


Make small balls by rolling both hands clockwise.


Fry the meatballs in extra virgin olive oil until golden brown.


Put some tomato passata in a pan and heat slightly. Add the cooked meatballs and simmer for 10 minutes.

Turn off the heat. Pour some of the sauce over the pasta.

Sprinkle the pasta with cheese  and buon appettito!
