Potatoes Nets with Artichokes, Bacon and Cheese

Ingredients

Boil the potatoes for 20-30 minutes, until tender.

In the meanwhile, mince finely the parsley.

Let the potatoes cool down for a while and then mash it.

Mix the mashed potatoes with the egg, minced parsley, butter, grated parmesan, salt and pepper.

Stir all together. If the mixture is too hard, dilute it with a little bit of milk.

Make the mashed potatoes dough

Fill a pastry bag with the dough. Cover a backing tin with baking paper.

On the tin, create your nests. Begin with the base, making a full circle with the mixture. Then, create the edges with two potatoes rings.

Bake the nests in the oven for around 10-15 minutes at 190°C.

While baking, dice the artichokes and the cheese.

Fill the baked nests with the artichokes, the cheese and the bacon. At the and sprinkle a bit of grated parmesan on top.
