Got recipes that require you to remove the internal part of courgettes? Don’t throw them away. Set them aside and turn them into this very simple but very tasty soup.

Ingredients
2 tbs Extra Virgin Olive Oil
2 Courgette
5 Ripe Plum or Vine Tomatoes
1 Onion
1 Garlic clove
2lt Vegetable stock
Salt

Procedure

Stir fry the finely chopped onion in 2 tb of olive oil. When soft, add the tomatoes, the courgettes cut in chunky pieces and the garlic. Cook for 5 min.

Add the the vegetable stock and cook for 15 min. Blend all together, adjust with salt and serve with a drizzle of extra virgin olive oil.
