Two recipes with Balsamic Vinegar

I will share with you 2 recipes from “Malpighi’s Cook Book”. Malpighi is the family that produces Traditional Balsamic Vinegar of Modena since 1850, the red balsamic vinegar “Saporoso” and white “Prelibato” that we sell and you probably already know 🙂

The book contains 45 recipes that go from Aperitifs to Desserts, passing by the first course of pasta or rice and second course of meat or fish. You can have one copy of this small book by following the instruction at the end of this article.

And now, here’s your first recipe:

Rolle’ of Pepper and “Mozzarella Fiordilatte”

Ingredients (good for 4 people)

Grill the pepper until they are scorched. Put it in a plastic bag for 30 minutes and remove the skin and the seeds. Cut them into large pieces.

Wash the rocket and cut it. Dress it with EVOO, salt and pepper.

Cut the mozzarella and wrap it with a piece of pepper. To prepare the roll’, put each roll’ on a bed of rocket and serve them with drops of Saporoso condiment.

Risotto with Parmesan Cheese and Cream of Onions with Traditional Balsamic Vinegar of Modena

Ingredients (good for 4 people)

  • 320g of rice for risotto (Carnaroli, Arborio or Vialone Nano)
  • 4 Onions
  • 150g of Butter
  • 150g of Parmiggiano Reggiano Cheese (Grana Padano is okay too)
  • Chicken Broth
  • a small glass of Dry White Wine
  • 2 tbsp EVOO
  • Salt and Pepper
  • Traditional Balsamic Vinegar of Modena (or Saporoso)

Cut the onion into thin slices. In a large pan, add the onions to half the butter and cook slowly until very soft. It must have a cream-like consistency.

In a casserole, toast the rice with the olive oil, then add the wine. When almost completely evaporated, add the broth a little at a time until ready.

Remove the rice from the stove and add the remaining butter and Parmesan cheese to make the risotto creamy (Mantecare). Serve with the cream of onions and a few drops of Traditional Balsamic Vinegar of Modena just before serving.
