Baked Lamb with Potatoes – My Mother’s Recipe

One of the recipes that my mother cooks at Christmas is Baked Lamb with Potatoes. It is one of the more traditional recipes from Italy for Christmas.

This is a recipe that does take a little bit more time to cook but very easy to prepare. It tastes fantastic too. It’s a great dish to serve at lunch.

Even though most of the recipes that you will find in various books and sites say that you have to stir fry the meat, my mother has her own way of cooking it.  The result is delicious.

How to cook Baked Lamb with Potatoes (my mother’s recipe)

500 gr lamb stew

6/7 medium size potatoes

2 cloves of garlic

2 glasses of white wine

Bay leaves

Extra virgin olive oil

Salt and pepper to taste

Grated Parmiggiano Reggiano

Procedure

My mother starts her recipe by marinating the lamb in a glass of white wine. Then she starts peeling the potatoes and cuts them in 4 pieces. She then puts the potatoes in a large pan with the pieces of lamb, the garlic, bay leaves, salt and pepper. She only uses a little drop of EVOO because she said the lamb will release fat while cooking. She covers everything with water and puts another glass of wine.

While the oven is heating at 200C, she puts the pan on a flame until it starts to boil. Then, she covers it with a tin foil and puts the pan in the oven for 30min.

After 30 minutes, she takes the tin foil off and sprinkles all the ingredients with freshly grated Parmiggiano. Then she puts it back in the oven at 180C for another 15 min. or until most of the water has evaporated.

She serves the Baked Lamb with Potatoes while it’s still piping hot. Buon appetito!
