These savoury biscuits with olives are tasty snacks to munch, for a snack, for an aperitivo, or for an original Christmas gift. They are made with genuine Italian products such as Natura e Bontà’s olive paté and our extra virgin olive oil. This recipe is vegan.

Ingredients (to prepare about fifteen biscuits)

All-purpose flour 180 grams
almond flour (or other dried fruit flour) 20 grams
cold water 50 ml
extra virgin olive oil 50-60 ml
olive paté 1-2 tbsp
pitted and chopped black olives 10
salt 4 grams
almonds for decoration – optional

Preparation

Chop the olives into small pieces.

Mix two types of flour together in a bowl, then add the salt, olive paté, chopped olives, oil, and finally the cold water.

Mix until you obtain a homogeneous dough – note that it does not require much kneading.

Wrap the dough in cling film and put it in the fridge.

After about half an hour take the dough from the fridge, flour a pastry board, use a rolling pin to roll out the dough in a 1/2 cm thick sheet.

Heat the oven to 180° C.

Cut out the stretched dough into circles, or use a knife to get squares.

Line a baking sheet with parchment paper and arrange the cookies.
Place in the oven and bake for 10-15 minutes at 180° C in a ventilated oven. The cooking time depends on the type of oven; if you do not have the fan function, you can extend the cooking time by a few minutes.
Allow to cool and store in airtight container.

Tips

If the dough seems too hard (which might happen depending on the type of flour or the amount of oil present in the paté), you can add a spoonful of white wine or an extra teaspoon of olive paté.
Instead of the olive paté you can use sundried tomato paté, artichoke paté, or add a few teaspoons of chilli paté. This dough can be made either by hand or in a mixer, but you should not work it too much, to avoid activating the gluten in the flour. If you like, you can add 1 gram of baking powder to the dough. Instead of almond flour you can blend walnuts, or use whole-meal flour, or rice flour.
