Vegetarian Ricotta-balls with Basil Tomato Sauce
This recipe is quick, easy and effortless!
These Ricotta balls are one of my favourite comfy-food: they are soft, tasty and warm! This is a versatile recipe that can be a money-saving way to help you use up your leftovers and stale bread.
You can also use gluten-free bread if you prefer and it can be a perfect alternative for a vegetarian diet and the best thing is that ricotta balls are also delicious the day after.
For my recipe, I also used a delicious Jar of Basil Tomato Sauce with onion and a hint of basil. A nutritious sauce full of antioxidants and bursting with flavour.

Vegetarian Ricotta-balls with Basil Tomato Sauce
Ingredients:
- 300g Ricotta
- 100g Stale Bread
- 1 Egg
- 30g Shaved Parmesan
- 30g shaved Pecorino
- Parsley
- 1 Jar of Basil Tomato Sauce
- Extra virgin Olive Oil “Il Vero”
In a bowl, stir together the ricotta and the stale bread, previously crumbled. Then add the shaved cheeses, egg, minced parsley and salt, as needed,
Create the balls and put them on a plate. Refrigerate for 10 minutes.
Meanwhile, warm up the Basil Tomato Sauce with a little bit of Extra virgin Olive Oil. Cook for 5 minutes on high heat.
Add the ricotta balls and cook all together on low heat for 10-15 minutes, stirring occasionally and covering the balls with the tomato sauce.
Serve hot with freshly minced parsley on top.
