Chicken Gratin with Vegetables and Mozzarella

Ingredients for 4 people:

Chicken Gratin - Ingredients

Slice the chicken breast and the courgettes in 1-2cm thick slices.

Marinate them in two separate dishes with the same mixture of 3-4 tablespoons of Extra Virgin Olive Oil, 3-4 tablespoons of White Balsamic Vinegar “Prelibato”, a pinch of salt and the mixed herbs. I used thyme and oregano; but, for example – you can also use rosemary, sage and mint.

Chicken Gratin - first step

Cover the dishes with cling film and place in the fridge for 1 and a half hour.

Chicken Gratin - second step

If you are in a rush you can skip this step – but remember that marinating the chicken and courgettes will allow them to become softer and taste totally delicious!

In the meantime: slice the mozzarella.

Chicken Gratin - mozzarella

After 1 and a half hour of marinating combine all the ingredients – creating first a row of chicken; then a row of courgettes and sundried tomatoes. Then, add a third with chicken and the last row of mozzarella. Continue until all the ingredients are placed in the casserole dish.

Chicken Gratin - final step

Put the casserole dish in the oven for 30-40 minutes at 180°C.

Then serve my delicious Gratin Chicken with Sun-dried Tomatoes, Zucchini and Mozzarella.

Enjoy and… Buon Appetito!!
