Soft Loaf with Veggies and Ham

 

A soft loaf is a smart way to make a delicious appetizer, side dish,  brunch or just a ready to go snack!

This is a super yummy and easy recipe and the amazing thing is that the texture gets even better few days after baking! So, if you need something special that you can prepare in advance to serve to your guests…

Why not a soft baked savoury loaf?

I made mine with green peas, ham, swiss cheese and our delicious Pepper Strips! You can get creative, though, and try this salad with seasonal fruits and veggies of your choice.

Soft Loaf with Veggies & Ham

Ingredients:

  • 120gr Green Peas
  • 120gr diced Ham
  • 1 Jar of Pepper Strips
  • 200gr Swiss Cheese (I used  Italian cheese “Scamorza” but Swiss Cheese is perfect as well)
  • 1 shallot
  • Extravirgin Olive Oil “Il Vero”
  • 180gr White Flour
  • 20gr Grated Cheese
  • 9gr Baking Powder
  • 2 Eggs
  • 80gr Milk
  • Salt, as needed
Ingredients

Chop the shallot.

Heat the pan and add a spoon of Extravirgin Olive Oil “Il Vero” . Then, fry the shallots slightly. Add the green peas, a bit of water and salt. Let it cook for 5-10 minutes.

In the meanwhile, dice the Swiss cheese and 80gr of pepper strips.

In a bowl, mix the flour, baking powder and grated cheese.

Crack the eggs into a second bowl and beat with a fork. Gradually add the milk and 60gr of Extravirgin Olive Oil “Il Vero” beating until smooth.

Slowly pour the flour mixture.

Combine the green peas and 2 spoons of the cooking water.

Add green peas to the batter

Add the diced ham, Swiss cheese and pepper strips and stir well.

Grease a loaf mold and put the mixture inside.

Pour the mixture into the mold

Bake in the oven, preheated at 180°C for around 45 minutes.

Once the cake is ready let it cool before removing from the mold.

You can eat it cold or warmed! Enjoy!
