Spring Baked Frittata Roll with Asparagus Patè

 

Have you ever tried to bake an omelette?

Today, I want to share with you an original way to make a delicious Spring Baked Frittata Roll. This is the perfect way to bake an omelette, a time saver recipe and a healthier choice! There is no need to add oil or butter to your omelette so the result will be really light and fat-free.

In order to roll up the frittata without breaking it, we will first whip the egg whites to obtain a fluffy texture that is not so fragile. This could even be called a “blown” frittata!

You can get creative and use your favourite ingredients! I have chosen a combination that run and swirl together, amplifying each other’s flavour: our unique Asparagus Patè and authentic Italian Gorgonzola cheese. I have also had sliced ham to add a touch of colour and flavour.

Spring Baked Frittata Roll with Asparagus Patè

Ingredients:

  • 4 Eggs
  • 2 spoons of Milk
  • 1 spoon of Flour
  • Salt and Pepper, as needed
  • 1 Jar of Asparagus Patè
  • 60g of Ham
  • 100g of Gorgonzola Cheese

Separate the eggs yolks and whites.

In a bowl, beat the yolks with the milk and flour and sprinkle some salt and pepper.

In a second bowl, whisk the whites with a pinch of salt into stiff peaks.

Add the whipped whites to the yolks, and mix slowly, from below upwards.

Make the mixture

Spread the mixture on a baking tray with baking paper.

Bake at 180°C for 1o minutes.

Spread the gorgonzola on the top of the frittata.

Then add the ham slices and finally the Asparagus Patè.

Helping yourself with the baking paper roll up the frittata. To melt the cheese we will put the roll in the oven for 5 more minutes.

Take the roll out of the oven, and let it sit for few minutes.

Slice the roll and serve warm… delicious!
