
Couscous with Seafood Salad and Green Peas
Today, I have prepared for you an extremely versatile and easy recipe that taste like spring and summer.
Couscous can be prepared in so many different ways. In this case, I really felt like using a mixed of Seafood Salad. I always keep a jar in the back of my store cupboard because it comes handy if you want to eat fish but cannot buy it fresh!
In this recipes, the peas and spring onions offer a bright crunch when paired with almonds and seeds. Then, fresh flavours are also accented by a touch of basil and a sprinkle of parsley on top.
This recipe boasts taste, good price and superb health benefits.
A dish that has the potential to become a springtime staple!
Couscous with Seafood Salad and Green Peas
Ingredients for 4 people:
- 200g Couscous
- 200g Green Peas
- 1 Jar of Seafood Salad
- 50g of Almonds and mixed Seeds
- 1 spring onion
- 1 clove of Garlic
- Basil and Parsley, as needed
- Extra Virgin Olive Oil “Il Vero”
- 1 teaspoon of turmeric
- Salt and Pepper, as needed

Put the couscous in a pot and cover it with a twofold volume of boiling water. Add the turmeric and a spoon of Extra Virgin Olive Oil “Il Vero”. Put the lid and let it sit for 10-15 minutes until the water is completely absorbed by the couscous.
In the meanwhile, cook the green peas in a pan with a little bit of olive oil and a clove of garlic. Add a pinch of salt, if needed.

Cut finely the spring onion, the basil and the parsley.

Gently break apart and fluff the cooked couscous with a fork.

Add the green peas, the seafood salad, the almonds and nuts, the sliced onion and a little bit of Extra Virgin Olive Oil “Il Vero”. Stir all together. Adjust salt and pepper, if needed.
All done! Serve warm or chilled… I have to say it taste even better the day after!
