“Polentine” snacks with Seafood Salad (or whatever you like better)

 

 

Here is a special and typical Italian recipe for summer: “Polentine”!

The preparation is very simple, all you need is cornmeal flour and water. Then, bake it in the oven!  This delicious snack does not contain gluten or dairy products and can be accompanied with any of your favourite ingredients.

I made my Polentine with different flavours including a jar of Seafood SaladArtichoke Patè and Asparagus Patè for a smooth and creamy texture.

Ingredients for 4 people:

Bring 1 litre of salted water to the boil. Then, pour the cornmeal flour slowly in the water, stirring with a wooden spoon.

Let it cook for 30-40 minutes until the “polenta” will have become more solid, stirring from time to time.

If you want to save some time, just use an instant mixture. You can find it in the best supermarket and it will take only a few minutes to get ready! Prepare the Cornmeal mush the day before.. it will be even better!

Cover a baking tray with a dampen backing paper and pour the “polenta” in it.

Then, cover with another dampens backing paper sheet.

Let it cool down and then put in the fridge.

Shortly before serving your appetizer, turn on the oven at 180°C.

Take the Polenta and, using biscuit cutters of your favourite shape, obtain many pieces of it. In Italian they are called “polentine”, meaning “tiny polenta pieces”.

Sprinkle few drops of Extra Virgin Olive Oil on top and bake in the oven for 10-15minutes. When golden and crunchy, remove the “Polentine” from the oven.

Spread a teaspoon of your favourite patè (I would suggest the Asparagus Patè or the Artichokes Patè).

Put few pieces of Seafood Salad on top. Leave some of the polentine with no dressing… they are delicious also just with a pinch of salt!
