Fresh Prawn & Apple Salad

 

Here is a delicious recipe that will bring a breeze of freshness to your table.

Healthy and crispy salad with prawns, apple and artichokes. I know it sounds a bit weird… but seriously, is delicious!

For my salad, I used the crunchy Grandmother’s Recipe Artichokes. I will show you how to convert your marinated vegetable in a fresh ingredient with a simple trick!

The final touch of this juicy salad is the addition of  White Balsamic Vinegar “Prelibato”  aged for 5 years in ash barrels. This unique condiment has a delicate aroma that magnifies the natural flavour of any fish, fruit or vegetables.

“Fresh Prawns & Apple Salad”

Ingredients:

Wash the marinated Grandmother’s Recipe Artichokes with fresh water, to eliminate the oil. Cut in halves and put them in a bowl with cold water and lemon juice.

Marinade the artichokes in cold water and lemon juice

In the meanwhile, slice the apples in thin chips.

Cut apples in chips

Make the same with the pecorino cheese or Parmesan, as you prefer.

Drain the artichokes from the cold water and dry the excess of water. Then, slice them.

Slice the drained artichokes

Bring a pot full of salted water to the boil. Cook the prawns for few minutes, until they become pink. It will take 4/5 minutes.

Cook the prawns

Mix the prawns, apple and cheese chips, minced parsley, and artichokes in a bowl. Add a pinch of chilli pepper powder, if you like.  Season well with generous White Balsamic Vinegar “Prelibato”, a bit of Organic Extra Virgin Olive Oil, which has a more delicate taste, and adjusts of salt and pepper.

Mix all together and season well
