Long Fusilli with Traditional Arrabbiata Sauce

 

Have you ever heard of “Arrabbiata Sauce”?

The name of this pasta dish literally means “Angry Sauce”. In fact, the spice kick could turn your face red, as if you were angry!  A traditional recipe from Rome that defines the very essence of its people: passionate, distinctive and a little bit grumpy!

This pasta recipe is usually made with  Penne. However, this time  I used Long Fusilli the long and twisted shape can give to your dish a special flavour absorbing most of the sauce.

This is super quick and easy to make… so, what are you waiting for to learn the authentic recipe of this traditional pasta dish?

Long Fusilli with Traditional Arrabbiata Sauce

Ingredients for 4 people:

Ingredients

Mince the garlic cloves and the parsley, chop the hot chilli peppers, and grate the pecorino cheese.

Mince, chop and grate the ingredients

Fry in a large pan the minced garlic with the chopped hot chilli peppers.

Fry the garlic and hot chilli peppers

Add the chopped peeled tomatoes and let it cook for around 10-15 minutes.

In the meanwhile, bring a pot full of salted water to the boil and cook the Long Fusilli.

Boil the pasta

Remove the chopped Hot Chilli Peppers from the sauce. Drain the pasta and pour it into the sauce.

Cook for few minutes the long fusilli in the pan, add the minced parsley and mix all together.

Add the parsley and stir all together

Serve the pasta with grated pecorino on top.

Important suggestions for a 100% Italian meal: 

If the hot chilli peppers are fresh, the first bite will get you on fire! Complement your dish with a glass of red wine to balance the hot taste.

Remember that you should use only garlic and NOT onion at all! Moreover, you should grate only Pecorino on top, and NOT Parmesan! However, if you are not able to find a good Pecorino in your area, we can close an eye ;P
