Chicken Wings with Red Pesto

 

Today, I have prepared for you a special recipe to give a healthy Italian touch to your chicken wings. Avoid deep frying the chicken and cook it slowly… This gourmet mixture combines Pitted Leccina Olives and Red Pesto to create a combination of fresh new flavours.

Red Pesto is a tasty sauce that combines the sweet and rich flavour of sun-dried tomatoes with carrots, celery, basil,  olive oil and a mixture of nuts. It is the perfect alternative to a healthy nutritious and easy meal.

This unique combination will result in a creamy and flavorful sauce. If you like your chicken wings with a spicy touch, try adding few tablespoons of hot chilly pepper spread to your sauce!

Chicken Wings with Red Pesto

Ingredients for 4 people:

Ingredients

Clean carefully the chicken wings with water, then dry them with kitchen paper. Season them with a pinch of salt.

Fry a clove of garlic in a pan with a little bit of Extra Virgin Olive Oil “Il Vero”. When brown, remove the garlic and sauteè the chicken wings for few minutes each side. When the wings are golden, blend it with white wine. Let the alcohol evaporate for 5 minutes on a medium heat.

 

Sauteè the chicken wings, blend with white wine and add the olives

Add the Pitted Leccina Olives to the pan and the Red Pesto. Stir well, to soak well the wings in the sauce.

Add the Red Pesto

Reduce to a low heat, cover with a lid, and cook for 15 minutes.

Smells good!

When ready, chop some basil leaves into gross pieces and add them to the chicken wings.

Serve warm and… toast some bread slices! This time you really need to soak up the sauce in the Italian way!
