The Caprese cake is a chocolate cake with a soft heart and a light crust outside. Made with almond flour, eggs, dark chocolate, and a little more, the Caprese is a traditional dessert from Capri Island.

Naturally gluten-free, this cake is easy and quick to prepare.

Ingredients

almond flour 250 gm.

dark chocolate 130 gm.

unsweetened cocoa powder 50 gm.

brown sugar 250 gm.

unsalted butter 250 gm.

eggs 250 gm.

rhum or other dry liqueur as you like 20 ml. (optional)

powdered sugar for dusting (optional) or cocoa powder

Equipment

1 tart pan, 1 bowl, parchment paper, 1 electric mixer (or 1 whisk as an alternative), 1 spatula, 1 small saucepan.

Method

Preheat oven to 320ºF (or to 160ºC) and line a tart pan with parchment paper.

Melt butter and dark chocolate, then cool.

In a bowl beat eggs with brown sugar (you can use a whisk or an electric mixer).

Add melted butter and chocolate and mix well.

Now add the almond flour and cocoa powder, and stir to incorporate.

Bake for 30 to 35 minutes.

When the cake is cooked, take it out of the oven and turn it into a wire rack to cool.

Decoration: sprinkle the surface of the cake with cocoa powder or powdered sugar.

Serve topped with whipped cream, strawberries, or ice-cream.
