Sugarless apple cake with olive oil
Here is a delicious and healthy cake. It is healthy because it represents an alternative way to eat fruits, and also because there is olive oil inside the dough. It is delicious because of its delicate mix of flavours, made possible thanks to the gently cooked apple puree and raisins.
Sugarless apple cake with olive oil
Ingredients
Flour 300 gr.
Eggs 3 (at room temperature)
Extra virgin olive oil 130 ml
Water 100 ml
Ripe apples 6
Raisins 75 gr.
Baking powder 12 gr.
Salt 1 pinch
Cinnamon powder (optional)
Grated lemon peel about 1
Equipment
1 knife, 1 chopping board, 1 spatula, blender, 1 cake pan, parchment paper.
Preparation
Peel apples, cut into 4 parts, remove the seeds and the core, and wash them well.
Put the flesh of 3 of the apples into a blender, add 2 tablespoons of water, and blend until you have a lumpy puree.
Place the apple puree into a saucepan and gently cook for a few minutes, then let cool.
Cut the remaining apples into thin slices, sprinkle with lemon juice, and set aside to use later for decorating the cake.
Crack the eggs, pour into the blender, and blend at high speed together with extra virgin olive oil and water.
Stop the blender and add the flour, baking powder, the pinch of salt, and the grated lemon peel. Mix well.
Stop the blender and add the apple puree. Mix again.
Lastly add the raisins. Mix just a few seconds (do not blend too much to avoid crushing the raisins).
Line a 22 cm baking pan with parchment paper and pour in the mixture.
Decorate the surface of the cake with the remaining apples and let them penetrate inside the dough. Add cinnamon if you like.
Cook the cake in a pre-heated static oven at 170 degrees for 45 minutes.
Let the cake cool before turning out onto a serving plate. Slice and serve!
Tips
For this recipe we have used wheat flour, but as an alternative you can use rice flour or other types as you like. If you use rice flour, then the recipe becomes gluten-free.
You can add also walnuts, pecan nuts, or almonds to decorate the cake.
We recommend using ripe apples. Since you also need the lemon peel, it is very important to buy organic lemons that are not treated with chemicals.
If you do not own a blender, you can use a bowl and whisk instead. In this case you must chop 3 of the apples finely and cook them a bit longer to make the puree.
