Baked vegetables with balsamic vinegar and aromatic herbs

Baking vegetables in a pan is very simple and also healthy.  This recipe will be a hit with guests thanks to the lively colours in its mix of seasonal vegetables and the added zing of mixed herbs.

Ingredients

aubergine 1

onion 1

courgettes 2

red pepper 1

yellow pepper 1

extra virgin olive oil 4 tbsp

mixed aromatic herbs (basil, sage, oregano, parsley, thyme, etc)

ripe tomatoes 2

balsamic vinegar 3 tbsp

salt and pepper

garlic (optional, only if you don’t use the onion)

breadcrumbs (5 tablespoons)

Equipment

1 baking sheet, baking paper, 1 knife, 1 cutting board, 1 large bowl.

Preparation

Wash the vegetables, clean, and cut them into cubes, except for the onions, which should be cut into thin strips.

Line a baking pan with parchment paper, and preheat oven to 200 degrees.

Put all the vegetables — except the tomatoes – in a large bowl; season with 3 tablespoons of olive oil but do not add salt yet. Carefully mix.

Pour into the baking pan so that the vegetables form a single layer. Add 2 tablespoons of water and bake for about 20/25 minutes, turning them once only halfway through cooking.

Meanwhile, chop the herbs, mix with the breadcrumbs and a tablespoon of oil (you can add a little chopped garlic if you like).

After 25 minutes add the tomatoes, salt, pepper, and mix carefully. Spread the grated bread and herb mix over the vegetables.

Place again in the oven for another 10-15 minutes, until all the vegetables are tender and the bread has formed the crust.

Remove from the oven, taste and add more salt if needed, then sprinkle with balsamic vinegar.

Your healthy and delicious vegetables are ready!

Tips

These vegetables are hot and cold delights. You can increase the amount of balsamic vinegar if you like.

You can combine these vegetables with baked fish fillets, or in summer you can serve them with delicious mozzarella morsels.

You can vary the types of vegetables and use mushrooms, pumpkin, cabbage, or other vegetables depending on the season.
