Pasta with turnip-green pesto, salmon, and pink pepper
A fast, healthy first course with a special taste. If you have little time to cook and you are looking for a special pairing, this is your recipe.
Ingredients
Penne pasta 400 gr
turnip greens pesto 200 gr (1 jar)
smoked salmon 100 gr.
pink peppercorns about 10
extra virgin olive oil 2 tbsp
Equipment
Chopping board, knife, non-stick pan, 1 tablespoon, 1 large saucepan, 1 baking tray.
Preparation
Bring the water to a boil to cook the pasta.
In the meantime, cut the salmon into strips about 3 mm wide.
Pour the extra virgin olive oil into a non-stick pan, add the salmon, and sauté for 1 minute.
Remove about half of the salmon to use for decoration, then add the pink pepper berries and the turnip greens pesto.
Cook the pasta and drain al dente and set aside a cup of the cooking water. Pour it into the pan with the salmon and turnip greens pesto.
Mix well, then top with the salmon you had kept aside and a few additional pink peppercorns.

Tips
You can use penne pasta shape to prepare this recipe, or other short pasta shapes such as fusilli. Whole wheat pasta is a great alternative to prepare this recipe.
